Vulcan Heated Holding Unit Shutdown & Start-Up Instructions
From pop-up restaurants to unforeseen events, there are times when a commercial kitchen has to close down temporarily. In those cases, Vulcan heated holding equipment has special shut-off and restart guidelines to keep the unit in peak condition when it's idle. Below are instructions from our friends at Vulcan for shutting down and starting up its heated holding units.

Vulcan Holding Unit Shutdown Procedures
The following are shutdown instructions apply to all heated holding unit models:
Cleaning the Unit
Please refer to the operator’s manual for complete cleaning instructions.
- Step 1. Start by cleaning and clearing the rear air intake.
- Step 2. Check the exhaust vent for any blockages and remove them if applicable.
- Step 3. Clean the interior. Make sure the oven is cool before starting. Remove all the racks and rack guides on each side of the oven. Wipe down the surfaces using cloth dampened in soap and water. You can substitute the cloth with a non-metallic scouring pad to remove stuck-on grease. A mild ammonia solution or oven cleaner, such as Easy-Off or Do, can be used as well in lieu of soap and water.
- Step 4. Wipe down the exterior and doors using a damp cloth. Make sure the oven is cool before starting. For stubborn stains, use a non-metallic scrubbing pad and wipe in the direction of the metal grain. For thick buildup, mix a thin paste of scouring powder with water and rub it lightly on surface in the direction of the metal grain.
- Step 5. Clean the control panel surface with hot water, soap and a soft cloth. Avoid using abrasive cleaners and metallic scouring pads on the panel surface. Also, don’t spray the panel or perforated areas with water or steam. This can cause moisture to enter the control cavity and damage electrical components.
- Step 6. Clean the fan area. If you routinely use aluminum foil on cooking sheets or to wrap food, check the blower wheel and air baffle for food remnants and foil particles.
Preparing the Unit
Once cleaning is complete, proceed to the following procedures:
- Step 7. Remove the water pans from the cabinet and empty them.
- Step 8. Check the unit for wear. Look specifically at the glass door assemblies as well as the door handle and latch. If there is noticeable wear, order replacement and have them installed by an authorized service technician.
- Step 9. Turn off the electrical supply to the unit and unplug the power cord.
- Step 10. Keep the doors slightly cracked open. This helps prevent mold and mildew buildup and dry rotting on the door gaskets.
Vulcan Holding Unit Start-Up Procedures
The following are restart instructions apply to all heated holding unit models:
- Step 1. For kitchens idle for 30 days or more, schedule an appointment with a qualified gas service technician to be onsite during the restart process. Also, check all gas equipment in the kitchen for gas leaks.
- Step 2. Clean the unit following the instructions in the operator’s manual.
- Step 3. Check the oven for rusted tubes, frayed wires and worn door latches.
- Step 4. Follow the remaining start-up in the operator’s manuals.
