Frymaster LOV Fryer Filtering & Maintenance
The Frymaster LOV fryer is a highly efficient machine used in many McDonald’s kitchens, whipping up batches of crispy nuggets and French fries in only a matter of minutes. To keep these units running at peak performance for years to come, routine maintenance is a must. Below are some useful tips for cleaning and maintaining a Frymaster LOV Fryer.

Daily Filtering
Many fast food chains, including McDonald’s, are required to filter a Frymaster LOV Fryer on a daily basis. The video above and steps below walk you through the procedure.
- Step 1. Turn off the fryer – With the oil at operating temperature, turn the fryer off by pressing the right filter arrow button for about three seconds. The filter menu will appear in the right display.
- Step 2. Start filtering process – Using the down arrow button, scroll to “MAINTENANCE FILTER.” Press the “1” checkmark button under the right display screen. The screen will alternate between “YES/NO” and a scrolling “MAINTENANCE FILTER.” Press the “1” checkmark button. The screen will display “FILTERING.”
- Step 3. Scrub the frypot – Once the oil drains from the frypot, scrub it clean with a fryer brush. The right screen will display “SCRUB VAT COMPLETE.” Press the “1” checkmark button to confirm.
- Step 4. Wash the frypot – The screen will display “WASH VAT” scrolling to “YES.” Press the “1” checkmark button to confirm. Oil will flow into the frypot to wash out any remaining debris. The display will change to “WASHING” scrolling to “WASH AGAIN?” then “YES/NO.” Pressing the “1” checkmark button will restart the process. If you’re done, press the “2” X button.
- Step 5. Rinse the frypot – After you press the “2” X button in the previous step, oil will rise in the frypot and flows into the filter pan. The screen displays “RINSE AGAIN?” scrolling to “YES/NO.” Pressing the “1” checkmark button will restart the process. If you’re done rinsing, press the “2” X button.
- Step 6. Start the polish cycle – After you press the “2” X button in the previous step, the screen displays “POLISH?” scrolling to “YES/NO.” Press the “1” checkmark button to start the polish cycle. The screen will display a five-minute countdown.
- Step 7. Fill the frypot with oil – Once the countdown is complete or the polish cycle is manually stopped, the screen will display “FILL VAT?” scrolling to “YES.” Press the “1” checkmark button to confirm. The frypot will start filling with oil. The bubbles for more than a few seconds as the filter pan empties.
- Step 8. Refill the frypot – The screen will display “VAT FULL?” scrolling to “YES/NO.” Press the “2” X button to repeat the process until the frypot is full. It needs to reach the highest edged line fill in the pot without standing oil in the filter pan. When both are confirmed, press the “1” checkmark button. With the procedure completed, the screen will stop displaying.
Cleaning the Inline Filter
The main in-line filter on a Frymaster LOV Fryer with OQS systems catches debris before it reaches the pump. The filter should be cleaned on a weekly or routine basis.
- Step 1. Put on protective gloves – This area of the fryer can be hot, so wear heat-resistant gloves to protect your hands.
- Step 2. Remove the filter cap – Using the adjacent wrench on the fryer, loosen the cap. With your gloves on, remove the cap.
- Step 3. Clean the filter trap – On the end of the cap, you’ll notice a small filter trap. Use a cloth to wipe off any grease or debris.
- Step 4. Reinstall the filter cap – Once the filter trap is clean, place the cap back on by hand and tighten with the adjacent wrench.
