Gas Pizza Oven Troubleshooting Guide

Commercial gas pizza ovens help make perfect pies day in and day out. From impinger to deck to conveyor ovens, there’s a style for every restaurant. So if an issue arises in your unit, it’s important to get it sorted and fixed fast so you don’t slow down your business. Below are some troubleshooting tips for gas pizza ovens to help isolate common issues that may occur.

Make sure you also consult your unit’s operations manual for specific troubleshooting tips and recommendations as outlined by the manufacturer. 

Deck Pizza Oven Has No Power/Oven Won’t Turn On

  • Not connected to power – If the pizza oven doesn’t start or turn on properly, check to see if the unit has been unplugged from the power source. Alternatively, the main circuit breaker may have tripped, and should also be checked. 
  • Faulty power cord – If there is still a power connection to the unit, it may be an issue with the power cord; check for visible damage and call an authorized service technician for assistance. 

Deck Pizza Oven Burner Not Lighting

  • Gas valve closed - Turn the gas valve to PILOT and relight the pilot light. 
  • Defective thermopile - Thermopile is broken and needs to be replaced or repaired by an authorized service technician.
  • Faulty igniter – Igniter is broken and needs to be replaced or repaired by an authorized service technician.
  • Faulty thermocouple – Thermocouple is broken and needs to be repaired.
  • Thermocouple needs to be adjusted – Have the thermocouple re-adjusted or recalibrated.
  • Disconnected gas hose – Gas hose is disconnected and needs to be reinstalled to the unit.
  • Not enough air – Air is a crucial component in starting a pilot light; adjust the air mixture at the inspirator as recommended by your unit’s operations manual. 

Fan Isn’t Running

  • Faulty or broken fan motor – Have an authorized service technician inspect and repair it.
  • Faulty or broken fuse holder – Have an authorized service technician inspect and repair it.

Deck Pizza Oven Too Hot

  • Thermostat too high – If the oven gets too hot, the thermostat could be set too high. Try lowering the temperature.
  • Poor air-gas mixture – High temperatures can be caused by poor air-gas mixture. Turn the oven off and adjust the air-gas mixture as needed.
  • Gas volume/pressure inadequate – If the gas volume or pressure isn’t adequate, contact a local authorized service technician to help.

Deck Pizza Oven Burner Not Hot Enough

  • Oven is dirty – If the burner isn’t getting hot enough, it could be dirty and blocked. Clean the oven routinely to avoid this. 
  • Gas volume/pressure inadequate – If the gas volume or pressure isn’t adequate, contact a local authorized service technician to help.
  • Burner flame too low – If a low flame is causing the burner to not reach temperature, adjust the burner flame as needed.

Deck Pizza Oven Not Cooking Properly

  • Food cooked in same spot - Make sure to rotate food to unused areas occasionally.
  • Oven temperature too hot - Lower the bake temperature.
  • Fan speed too powerful & pulling air - Lower fan speed. 
  • Area around walls too hot - Rotate pies or cook in middle of oven.
