How to Clean a Blodgett BC Touch Combi Oven Daily

Routine preventative maintenance of a Blodgett BC Touch Combi Oven is important as it clears build-up that could cause malfunctions and damage to a machine. It’s recommended to clean a combi oven daily to keep grime and debris from gathering in the oven. Below is a step-by-step guide on daily cleaning procedures and some of the supplies you will need. 

Pay attention to the recommended detergents for your oven to prevent any chemical damage to your commercial oven. 

Supplies

  • Stainless steel cleaner
  • Glass cleaner
  • Warm water & mild detergent
  • Cloths
  • Blodgett-approved detergent
  • Blodgett-approved rinse aid

Daily Cleaning

Make sure to pay attention to the recommended detergents you use to prevent damage to your combi oven.

  • Step 1. Check detergent and rinse aid levels - Make sure there is enough rinse aid and detergent on a daily basis, filling it as needed. 
    • The red tube is for rinse aid and the blue tube for detergent on BLCT-6E and 10E models. 
    • The red tube is for detergent and the blue for rinse aid on BCT/BLCT-61, -61, -101, -102, and -202 models.
  • Step 2. Check oven temperature - Check if the oven is below 176 degrees fahrenheit. If it is not working, run the ‘CoolDown’ function to bring the temperature down. 
  • Step 3. Remove internal racks - Remove all the inside racks and place them in the dishwasher for cleaning.
  • Step 4. Clean the interior - Clean the interior oven cavity and door with a mix of warm water & mild detergent and wipe away any excess with a clean cloth. 
  • Step 5. Clean door gasket and catch tray - Wipe the door gasket and catch tray with warm water & mild detergent, clearing out any debris and dirt that has accumulated. 
  • Step 6. Wipe down the exterior - Using a fresh cloth, wipe down the exterior with some stainless steel oil. Make sure to use a separate, clean cloth to dry afterwards.
  • Step 7. Get to the manual menu - Press the manual key on the main menu touch screen. This should bring you to manual menu options. 
  • Step 8. Press the wash button - Press the combi wash button to pull up the wash modes. You will have a selection of different wash options to pick from. 
  • Step 9. Select your desired wash mode - Select the correct wash mode for your oven. Use flush before starting other cleaning cycles, light after steaming and roasting at low temperatures, medium after steaming and roasting at medium temperatures, heavy after roasting at temperatures above 356 degrees fahrenheit or use intensive after roasting very greasy products. Each one has a different duration, with shorter times for light cleaning and longer times for more thorough cleaning. 
  • Step 10. Confirm your selection - Press the Yes button to begin the combi wash. If the cleaning cycle is interrupted, the oven automatically performs a safety flush to remove detergent.
