How to Clean a Frymaster Fryer

Thanks to their durability and quickness, many restaurants and commercial kitchen rely on Frymaster fryers. They can fry up anything from crispy rings to juicy wings in a matter of minutes. Routine maintenance is a must to keep these pieces of equipment running smoothly. Our guide shows you how to clean a Frymaster fryer properly.

Daily Cleaning Procedures

The following cleaning tips are common on all Frymaster models.

  • Clean the interior fryer cabinet – Use a clean, dry cloth to wipe down the interior cabinet. Make sure to wipe the metal surfaces and parts, removing any buildups of oil or shortening and dust.
  • Clean the exterior fryer cabinet – Dampen a cloth in mild detergent and water. Use it to clean any oil, shortening, dust or debris from the cabinet’s exterior
  • Filtering oil or shortening – The oil or shortening should be filtered at least twice a day. Consider doing it more often if your fry a heavy volume of food. Follow the procedures laid out in the owner’s manual.

Frypot Boil Out Procedures

Boil out the fryer at least once a week. You should boil out daily if the unit is used regularly to fry a heavy volume of food.

GF Gas & Pro-Series Electric Instructions

  • Step 1. Close the drain valve – Start by closing the frypot drain valve. Make sure the burner is not lit.
  • Step 2. Add cleaning solution – Add a mixture of cold water and boil-out solution or detergent. Follow the mixing instructions on the detergent container. Fill to the cleaning solution to the lower oil-level line.
  • Step 3. Light the fryer and simmer – Light the fryer and let the cleaning solution simmer for about an hour. On Pro-Series Electric, press the ON/OFF switch to the ON position. On fryers with solid state analog controllers, set the melt switch to OFF.
  • Step 4. Turn the gas valve to PILOT – After the cleaning solution simmers, turn the gas valve knob to PILOT. Let the solution cool down.
  • Step 5. Add cold water – Add about a gallon of cold water and stir it into the solution.
  • Step 6. Drain and clean the frypot – Use a heavy-duty container to drain the solution from the frypot. Clean the interior thoroughly using a clean cloth dampened in warm water and mild detergent.
  • Step 7. Rinse and dry the frypot – Rinse the frypot by filling it with clean water and draining. Repeat this process at least twice. When you’re finished, dry the frypot with a clean, dry towel.

SR Dean Millivolt Instructions

  • Step 1. Close the drain valve – Start by making sure the frypot drain valve is closed and burner isn’t lit.
  • Step 2. Fill with water and cleaning solution – Fill the frypot to just below the upper oil level mark with water. Then, add one cup of detergent.
  • Step 3. Boil the solution and simmer – Light the fryer to bring the cleaning solution to a boil. Let it simmer for about 10-15 minutes
  • Step 4. Drain and rinse the frypot – After the solution has simmered, drain and rinse the frypot at least twice with clean water twice. To remove any remnants of detergent, add 1/4 cup of white vinegar to the water during the final rinse.
  • Step 5. Dry and refill the frypot – Use a clean, dry towel to dry out the frypot. Refill with cooking oil when ready. If the fryer won’t be used immediately after drying, Frymaster recommends wiping down the frypot with a light coat of cooking oil. This helps prevent rust from forming.

Weekly Maintenance

Below are a couple of quick and easy maintenance tasks to perform each week.

  • Clean detachable components – Carbonized oil or shortening builds up on detachable parts and accessories, including baskets and trays. Every quarter, wipe them down using a clean cloth dampened with water and a mild detergent. Rinse and try them thoroughly.
  • Clean the gas valve vent tube – Straighten the vent tube and unscrew it from the gas valve. Use a standard piece of binding wire to remove obstructions inside the tube. Blow through the tube to make sure it’s clear. If so, reinstall the tube and bend it to make sure the opening is pointing down.
