  • Step 1—When the controller displays “Filter Now” and “YES / NO” at the end of a cook cycle, press the up arrow under “YES;” pressing “NO” will resume cooking operations.
  • Step 2—The controller will prompt for the vat to be skimmed. When displayed, remove any debris from the oil.
  • Step 3“Start Filter” is displayed: Pull the filter knob next to the blue light. Oil will rise in the fry pot to clear the drain and then drains to the filter pan.
  • Step 4Controller displays “Draining”: The display will read “Flushing” after the fry pot drains. The oil flows through the fry pot, washing away crumbs and debris. Once this is complete, the display will read “CLOSE DRAIN.” Push in the filter knob next to the blue light, and the display will read “FILLING” as the fry pot fills with oil. The oil will start to bubble as the filter pan is emptied of oil, and the display will read the set point and current oil temperature. The light next to the filter knob will turn red when the oil has reached the appropriate temperature.
