How to Use Cook Modes on Blodgett BC Touch Combi Oven

If you want to use your Blodgett BC Touch Combi Oven to the fullest, you need to try out any of the cook modes that are designed for specific dishes. Check out the different cook modes below to get step-by-step instructions on how to use them and which modes to use for specific types of recipes. 

Convection/Hot Air

The convection/hot air mode is Ideal for bakery items like cookies, cakes & muffins.

  • Step 1. Start from manual menu - From the manual menu, select the convection key to get to the convection mode.
  • Step 2. Setting the temperature - Press the square key under convection and type in the desired temperature on the keypad, then press ok. 
  • Step 3. Set the desired time - Press the timer to go back, then press the square key under the timer and type in the desired time in hours & minutes on the keypad. Press ok to continue.
  • Step 4. Changing the fan speed - In the lower left corner of the screen, press the fan speed key. Drag the dial up or down to select a fan speed from 0-100% and then press ok.
  • Step 5. Open or close the vent - Press the vent key at the bottom of the screen to open or close the vent. It should be open while grilling, roasting meats or baking breads and pastries. 
  • Step 6. Start steam injection - Enable steam injection by pressing the steam key in the bottom right corner of the screen. Drag the dial up or down to set the steamer timer from 0-99 seconds, then press ok. 
  • Step 7. Continue or end the cycle - When the recipe is done, press the exit key to end the cooking cycle or press the restart key to continue. 

CombiSmart

This mode allows you to select a preset humidity level used throughout the cooking process.

  • Step 1. Start from manual menu - From the manual menu, select the combismart key to get to the combismart menu. 
  • Step 2. Setting the temperature - Press the left square key under combismart and type in the desired temperature on the keypad, then press ok. 
  • Step 3. Choose the steam level - Press the timer to go back, then press the right square key under combismart and type in the desired steam level on the keypad. Press ok to continue.
  • Step 4. Set the desired time - Press the timer to go back, then press the square key under the timer and type in the desired time in hours & minutes on the keypad. Press ok to continue.
  • Step 5. Adjust the fan speed - At the bottom of the screen, press the fan speed key. Drag the dial up or down to select a fan speed from 20-100% and then press ok.
  • Step 6. Continue or end the cycle - When the recipe is done, press the exit key to end the cooking cycle or press the restart key to continue. 

CombiOptima

CombiOptima mode automatically adjusts humidity levels to your desired level throughout the cooking process.

  • Step 1. Start from manual menu - From the manual menu, select the combioptima key to get to the combioptima menu. 
  • Step 2. Setting the temperature - Press the left square key under combioptima and type in the desired temperature on the keypad, then press ok. 
  • Step 3. Set the humidity level - Press the current humidity level to the right of the cloud key. Select the right square key under combioptima and type in the desired humidity level on the keypad, then press ok. 
  • Step 4. Set the desired time - Press the timer to go back, then press the square key under the timer and type in the desired time in hours & minutes on the keypad. Press ok to continue.
  • Step 5. Continue or end the cycle - When the recipe is done, press the exit key to end the cooking cycle or press the restart key to continue. 

Retherm

With carefully calculated humidity, the Retherm mode brings already prepared food to proper quality. 

  • Step 1. Start from manual menu - From the manual menu, select the retherm key to get to the retherm menu.
  • Step 2. Setting the temperature - Press the square key under retherm and type in the desired temperature on the keypad, then press ok. 
  • Step 3. Set the desired time - Press the timer to go back, then press the square key under the timer and type in the desired time in hours & minutes on the keypad. Press ok to continue.
  • Step 4. Changing the fan speed - At the bottom of the screen, press the fan speed key. Drag the dial up or down to select a fan speed from 20-100% and then press ok.
  • Step 5. Continue or end the cycle - When the recipe is done, press the exit key to end the cooking cycle or press the restart key to continue. 

Steam

The Steam mode is ideal for boiled, simmered or poached foods like vegetables, rice, shellfish and potatoes. 

  • Step 1. Cool down the oven - From the main menu, select the advanced menu and then press the cool down key. Leave the oven doors open and allow it to cool to around 175 fahrenheit. 
  • Step 2. Start the steam mode - Press the manual key in the main menu, then select the steam mode. 
  • Step 3. Setting the temperature - Press the square key under steaming and type in the desired temperature on the keypad, then press ok. 
  • Step 4. Set the desired time - Press the timer to go back, then press the square key under the timer and type in the desired time in hours & minutes on the keypad. Press ok to continue.
  • Step 5. Changing the fan speed - At the bottom of the screen, press the fan speed key. Drag the dial up or down to select a fan speed from 20-100% and then press ok.
  • Step 6. Continue or end the cycle - When the recipe is done, press the exit key to end the cooking cycle or press the restart key to continue.
