How to Clean a Commercial Door-Type Dishwasher

In order for commercial warewashing to keep getting your dishes clean, the unit will require some preventative maintenance. Otherwise leftover food and debris can build up at the bottom of the unit and cause wash arms and other components to not function like they should. This guide on how to clean a commercial door-type dishwasher will walk you through how to clean most units so you can have it shining like new.

Cleaning Instructions

  • Step 1. Unload the unit - Remove any remaining dishes and racks from the unit.
    • Note: Remember to let the unit cool down after its final wash cycle.
  • Step 2. Power down the unit - Turn off the dishwasher.
  • Step 3. Disassembly - Remove the rinse arms and wash manifolds from the unit by following the user manual for proper disassembly instructions. 
  • Step 4. Drain water - Drain the dishwasher of remaining water by following the user manual for proper draining instructions.
  • Step 5. Additional disassembly - Remove the scrap and intake screens from the unit.
  • Step 6. Wash unit interior - Clean the dishwasher interior with warm water and mild detergent. 
  • Step 7. Rinse the interior - Use a damp cloth or hose to rinse the unit interior.
  • Step 8. Wash the drain valve - Clean the drain valve area by removing any refuse and then rinsing. 
  • Step 9. Wash the exterior - Use stainless steel cleaner to clean the dishwasher exterior. 
  • Step 10. Wash removed components - At a sink, clean and rinse the rinse arms, wash manifolds and screens.
    • Note: Let all components air dry before reinstalling. 
  • Step 11. Reinstall components - Install the rinse arms, wash manifolds and screens in the reverse order they were removed.
  • Step 12. Dry the interior - Leave the unit door open overnight to fully air dry the dishwasher interior.
