How to Clean a Commercial Range

  • Step 1. Turn off the oven controls and let the unit cool.
  • Step 2. Remove and clean the dip trays with soapy water.
    • Note: wrap trays in foil to reduce cleanup.
  • Step 3. Clean interior enamel surfaces with warm water, soap and a scrub pad. Then, dry with a soft cloth.
  • Step 4. Remove stuck-on grease or food with a scrub pad.
    • Note: Don’t use wire brushes, steel scouring pads or abrasive tools.
  • Step 5. Clean spills by the pilot area, air mixer and under the burners as needed.
    • Note: Use a wire brush if necessary.
  • Step 6. Periodically clean the burner grates and burners using a scrub pad, soap and water.
  • Step 7. Dry burners and grates with a cloth, then season them before putting them back in place.
  • Step 8. Clean the racks with warm water and a sponge and let them air dry or dry them with a cloth.
