How to Fill & Use a Pitco Fryer with OneTouch

Getting ready to use a new fryer for the first time can be intimidating. Especially one with fancy buttons and touchscreens. While it may seem difficult to operate at first, using this handy guide can help make it easy. Parts Town is here to help walk you through how to fill and use a Pitco fryer with OneTouch controllers so you’re ready to get frying.

The following steps are applicable to Pitco Solstice fryers with the OneTouch controller

How to Fill

Depending on the business’ SOPs, the fryer can be filled with either liquid or solid shortening. 

Liquid Shortening

  • Step 1. Ensure the drain valve is closed, the grate is properly installed and there’s no moisture in the fry tank before you begin to fill it.
  • Step 2. Add liquid shortening to the tank up to the MIN level mark. 
    • Note: Oil will expand slightly when it heats up. 

Solid Shortening

  • Step 1. Remove the tank rack.
  • Step 2. Cut the solid shortening into cubes no larger than 1 inch. 
    • Note: Shortening will be easier to cut if it’s at room temperature.
  • Step 3. Tightly pack in the shortening below, between and just slightly over the top of the burner tubes and then heat up the unit to melt it.
    • Note: Don’t leave large air gaps and be careful not to damage the probes while packing. 

How to Use

Operating a Pitco Solstice fryer with OneTouch is easier than you may realize.

  • Step 1. After filling the unit, turn it on by pressing the power button on the touchscreen.
  • Step 2. Select yes to confirm the fryer is full so it can safely light the pilot.
    • Note: Wait for the unit to reach the temperature set point before proceeding.
  • Step 3. For units with the basket lift operation, load them onto the lifts and add product to the baskets. The automatic lift will handle dropping and raising the baskets for you based on the selected program.
    • Note: Units without this feature will need to have the baskets manually dropped and lifted. 
  • Step 4. For units with timers, select the programmed timer and let product cook.
