How to Program an Ultrafryer UltraGold Fryer with Ultrastat 23

Ultrafryer UltraGold fryers that are equipped with the UltraStat 23 controller can be programmed so the unit works best for your business. If you need to program your controller, follow our guide so you can easily set the product, cook time, temperature and more.

This guide is applicable for the 14, 18 and 20 model series.

Programming Instructions

Accessing Programming Stage

  • Step 1—Press and hold the “P” key for 3 seconds until the display reads “PROGRAM.”
  • Step 2—Press the ”P” key again. The display will now read “CODE.”
  • Step 3—Type in the password using the product keys. The password is “1724.”

Programming Product, Product Name, Cook Time and Cook Temperature

  • Step 4—Press the “P” key twice until the display shows “PRODUCT” again.
  • Step 5—Select a product key to program.
  • Step 6—Press the “P” key twice. 
  • Step 7—When the display shows “NAME,” you can then use the up and down arrow keys to scroll through the library for a product display name.
  • Step 8—When you have found the product you need, press the “P” key to select and save the name.
  • Step 9—Use the product keys to enter a new cook time.
  • Step 10—Press the “P” key to select and save the time.
  • Step 11—Use the product keys to enter a new cook temperature.
  • Step 12—Press the “P” key to select and save the temperature.
  • Step 13—Use the left and right arrow keys to select either “STRAIGHT” or “FLEX.”
  • Step 14—Press the “P” key to select and save.
  • Step 15—Change the cook time from 2 to 0. If you need to add additional stages, repeat steps 9-14.
  • Step 16—Press the “P” key to proceed to the next steps.

Programming Action Alarm Time, Name and Tone

  • Step 17—Use the product keys to enter a new action alarm time.
  • Step 18—Press the “P” key to select and save the action alarm time.
  • Step 19—Use the up and down arrow keys to scroll through the library of names for the action alarm.
  • Step 20—Press the “P” key to select and save the name.
  • Step 21—Use the left and right arrow keys to select either “AUTO” or “MANUAL” for the action alarm cancel mode.
  • Step 22—Press the “P” key to select and save.
  • Step 23—Use the left and right arrow keys to select an action alarm tone.
  • Step 24—Press the “P” key to select and save.
  • Step 25—Change the cook time from 2 to 0, or repeat steps 18-24 to add a second alarm profile.
  • Step 26—Press the “P” key to proceed to the next steps.

Programming Hold Time

  • Step 27—Use the product keys to enter a hold time.
  • Step 28—Press the “P” key to select and save the hold time.
  • Step 29—Double-check this is the correct number key for the program you originally selected. Once verified, press the “P” key to save.

Programming Weight

  • Step 30—Use the product keys to enter a new weight.
  • Step 31—Press the “P” key to save the new weight.

Exiting the Programming Stage

  • Step 32—Begin exiting the programming settings by pressing the up arrow key until “EXIT” is shown on the display.
  • Step 33—Press the “P” key to confirm.
  • Step 34—Press the up arrow key again until “EXIT” is shown on the display.
  • Step 33—Press the “P” key to confirm again.
  • Step 35—Press the up arrow key one final time until “EXIT” is shown on the display.
  • Step 36—Press the “P” key to confirm again. “OFF” will then be shown on the display.
