How to Sharpen a Globe SG13 Slicer

Dull blades can pose a serious hazard in commercial kitchens and can slow down productivity. If you want to get your slicer blades sharp, check out our guide on how to sharpen a Globe SG13 slicer. 

Per the manufacturer’s recommendation, Globe SG13 and SG13A blades need to be sharpened periodically to provide consistent slices. Light sharpening on a daily routine is better for the blade versus heavy sharpening maintenance infrequently.

Sharpening the Blade

  • Step 1. Disconnect the power - Unplug the slicer and make sure there’s no power connected to the machine. Always ensure this step before proceeding to prevent serious injury.
  • Step 2. Engage the gauge plate - Turn the slice thickness dial clockwise until it fully stops. The knife’s edge should be fully covered with the gauge plate. 
  • Step 3. Clean & dry knife blade - Following the manual with the manufacturer’s best practices, clean and dry the knife blade. 
  • Step 4. Mount the sharpener - Slide the knife sharpener up the mounting post and then rotate it 180 degrees. 
  • Step 5. Position the sharpener - Start lowering the knife sharpener, making sure the handle is pointing up. Push down on the sharpener until you hear it click into position. 
  • Step 6. Connect to power - Plug the machine back into the outlet and turn on the knife motor. 
  • Step 7. Press the sharpener down - Pull the knife sharpener handle towards the front, making sure you maintain pressure on the sharpener for 3-5 seconds. The sharpener and honing stone should make contact with the blade. 
  • Step 8. Stop the motor - Press the STOP button on the control to turn off the motor. 
  • Step 9. Rotate the sharpener - Take the sharpener and rotate it back into place. 
  • Step 10. Wipe down the blade - Using a clean cloth, wipe off the grind shavings and clean the entire slicer. For more information on cleaning your Globe slicer, refer to your manual or check out our cleaning guide.
