How to Start & Operate a Groen Steam Jacketed Kettle

From hospitals and schools to restaurants and offices, Groen steam kettles are popular in many commercial kitchens. Need help with using it? We have both a step-by-step guide and video on how to start and operate a Groen steam jacketed kettle, so it can be fired up and ready to cook in no time. 

  • Step 1. Verify clearance and tilting operation of kettle - Turn the wheel handle to ensure that the tilting feature of the kettle is functional. 
  • Step 2. Check the water level - Check the water level in the jacket, ensuring that the water level is between the two lines on the gauge glass. The water level should be checked on a daily basis to ensure that it’s always between the two lines. 
  • Step 3. Look at the pressure gauge - Before checking the pressure gauge, make sure the kettle is cold to prevent injury. Look at the pressure gauge and make sure that it shows between 20 to 30 PSI. If the pressure isn’t set correctly, refer to your manufacturer's manual about changing the pressure setting. 
  • Step 4. Make sure kettle is set to OFF - Check the kettle on/off switch and that it’s set to OFF. You want to ensure that the kettle is OFF before proceeding to the next step. 
  • Step 5. Open main gas valve - Use the handle on the main gas valve to connect the kettle to the gas. 
  • Step 6. Preheat the kettle - Add  a base of oil or water before preheating the kettle. Once you do, turn the on/off switch to the ON position and allow the kettle to preheat. 
  • Step 7. Adjust the heat - To adjust the heat, start by pressing the MANUAL button. Use the dial to adjust the heat to your desired level.
