How to Use a Lang Convection Oven With Cooktop
Equipment with multiple cooking functions can be intimidating. Each function needs to be properly operated to avoid damaging the equipment or leading to accidents. If the unit is brand new to the business or you’re a newer employee, this comprehensive video guide is here to help. It’ll walk you through how to use a Lang convection oven with cooktop and the do’s and don’ts for operating it.
How to Operate
- Step 1. Power up the unit - Plug in, turn on and let the unit fully heat up.
- Step 2. Adjust the fan - Use the switch to select the desired fan setting.
- Step 3. Adjust the fan speed - Use the switch to select the desired fan speed setting.
- Step 4. Adjust the temperature - Use the dial to adjust the temperature setting. Let the unit heat up to the new temperature and then load in product.
- Step 5. Start a timer - Adjust the timer to the desired time and wait for it to go off. Monitor product while it’s cooking by using the oven window. The timer will sound once it runs out.
- Step 6. Unload the oven - Remove product from the oven cavity once it’s fully cooked.
- Note: Use heat resistant gloves when handling hot pans and product.

- Do #1 - Check product near the end of the cook cycle by looking through the oven door glass.
- Do #2 - Maintain equal spacing between pans in the oven.
- Do #3 - Weigh product before baking to ensure consistent portions.
- Do #4 - Wear heat resistant gloves or oven mitts when removing hot pans and trays from the oven.
- Do #5 - Depending on your unit’s specific cooktop:
- Use stock pots and heavy kettles on 12” x 24” hot plates.
- Use light-duty saucepans and small stock pots on round french plates.
- Perform heavy and light frying on 18” x 24” grill plates.
Operational Don’ts
- Don’t #1 - Open the door frequently or for prolonged periods of time during cooking.
- Don’t #2 - Use warped or bent pans and trays.
- Don’t #3 - Use heavy stock pots or heavy urn kettles on round french plates.
- Note: Not all units will have round french plates on the cooktop.
- Don’t #4 - Overload the pan with too much product.
