How to Use a Southbend Convection Oven

From cooking savory dinner entrees to baking sweet breads and pastries, convection ovens can truly do it all. The variety of which these units can cook makes it a valuable piece of equipment in a commercial kitchen. Don’t let its versatility intimidate you though; they are relatively easy to operate with a good set of instructions to guide you. That’s why Parts Town is here to walk you through how to use a Southbend convection oven.

The following is applicable to Southbend’s B, G and SL series ovens. 

Lighting the Pilot

To light the pilot, simply turn the power switch to ON. If it’s a touchscreen model, be sure to select a mode after flipping the switch. 

If the burner doesn’t ignite in 4 seconds, the oven will automatically shut off the gas. Wait 5 minutes before trying to relight the pilot if it fails to light on the first attempt. After 3 failed attempts, contact an authorized service technician. 

Operation

A standard unit is operated via buttons, switches and dials on the control board

  • Step 1. Once the pilot is lit, select a desired fan speed setting by flipping the switch to HI or LOW.
  • Step 2. Flip the fan mode switch to COOK.
  • Step 3. Set the oven temperature by adjusting the Cook Temperature dial to the desired setting.
    • Note: The Heat On indicator light will turn on when the burners are on and will remain on while the unit preheats.
  • Step 4. Wait for the unit to finish preheating as indicated by the Heat On indicator light turning on and off 3 times.
  • Step 5. Once preheating is completed, product can be loaded into the oven.
  • Step 6. Adjust the Cook Timer dial to the desired setting.
    • Note: The timer is just to notify users when cooking is completed and won’t turn off the oven. 
  • Step 7. Once cooking is done, you can cool product by switching the fan mode to COOL and leaving the oven doors open.
  • Step 8. After cooking and cooling is done, set the Cook Temperature dial to the lowest setting.
