How to Use a TurboChef Conveyor Oven

Creating delicious pizzas requires a quality oven and the know-how to use it. So if the toppings have been piled on the pie and you’re not sure what needs to be done before loading it into the unit, you’ve come to the right place. We’ll show you how to use a TurboChef conveyor oven with both programmed modes and manually. 

The following are applicable to High h conveyor oven models such as Hhc-1618, Hhc-2020 and Hhc-2620

Using a TurboChef Conveyor Oven

These steps are for models with the older controller, before the OneTouch. 

  • Step 1. Turn on the oven 
  • Step 2. Use the soft keys to select a cooking profile and wait for it to preheat.
    • Note: The oven will begin a soaking mode as part of the preheat process.
  • Step 3. Carefully place product on the starting end of the conveyor. 
  • Step 4. Remove product from the other end of the conveyor once it’s finished cooking. 

Using a TurboChef Conveyor Oven with OneTouch

The following instructions are for units with the OneTouch controller:

Preset Cooking

  • Step 1. Turn on the oven and wait for it to preheat.
    • Note: When the unit reaches 200°F, the oven will begin soaking mode as part of the preheat process.
  • Step 2. Press the Presets button to access the available recipes.
    • Note: Recipes highlighted green have the same temperature and blower percentage. Recipes highlighted yellow will display a confirmation before changing to that recipe. 
  • Step 3. Select a recipe.
    • Note: If a yellow highlighted recipe is selected, the oven will then begin reaching the set temperature and blower percentage.
  • Step 4. Carefully place product on the starting end of the conveyor. 
  • Step 5. Remove product from the other end of the conveyor once it’s finished cooking. 

Manual Cooking

  • Step 1. Turn on the oven and wait for it to preheat.
    • Note: When the unit reaches 200°F, the oven will begin soaking mode as part of the preheat process.
  • Step 2. Select the Manual button to enter Manual Cook mode.
  • Step 3. Use the - and + buttons next to Temperature to adjust the setting in 5°F increments.
  • Step 4. Use the - and + buttons next to Time to adjust the cooking time in one-second increments. 
  • Step 5. Use the - and + buttons by the top blower percentage to adjust in 1% increments. 
  • Step 6. Use the - and + buttons by the bottom blower percentage to adjust in 1% increments. 
  • Step 7. Carefully place product on the starting end of the conveyor. 
  • Step 8. Remove product from the other end of the conveyor once it’s finished cooking. 

Idle & Power Down

If you need to temporarily suspend operations or a full end of day shut down, consider the following:

  • Idle: If you are pausing cooking, press the Idle button to reduce the blowers to 30% and belt speed to 15 minutes to save power.
  • Power Down: If cooking for the day is completed, press the power button to turn off the unit and let it cool down.
