Seasoning an Imperial Gas Griddle
Your Imperial griddle is a valuable asset in your commercial kitchen, and should be regularly maintained. One important preventative maintenance task to complete is seasoning the griddle surface. The process of seasoning creates a protective layer of oil on the griddle surface, while also making the surface nonstick for effortless cooking. Supplies
- Water
- Vinegar
- Dish detergent
- Burlap
- Cleaning cloths
- Shortening or liquid frying compound
How to Season an Imperial Gas Griddle
- Step 1—Clean the griddle with hot, soapy water to remove factory coating. Do not pour water directly onto the griddle surface.
- Step 2—Rinse the griddle surface with a mixture of ¼ cup vinegar to 1 quart water and a cloth.
- Step 3—Using a clean cloth or paper towel, spread unsalted shortening or liquid frying compound onto the griddle surface. Be sure to evenly coat the griddle.
- Step 4—Turn on the griddle burners and set the temperature to medium heat (or 350° F / 177° C), then wait for the shortening to melt.
- Step 5—Turn off the burners once the shortening or oil begins to smoke.
- Step 6—Take a piece of clean burlap and rub the melted shortening or oil into the griddle. Make sure to follow the direction of the griddle surface’s polish marks.
- Step 7—Allow the griddle to cool, then repeat Steps 3-6.
- Step 8—Let the griddle surface cool down once more, then wipe the surface with a final thin layer of shortening or oil.
