Taking a more proactive approach to maintenance will keep your Ultrafryer infrared fryer in good working order for as long as possible. Daily Cleaning & Maintenance Tasks
Remember to perform daily maintenance before moving on to the weekly procedure. For more detailed information on daily cleaning tasks, see our Ultrafryer fryer cleaning guide. When cleaning the exterior surfaces, be sure to avoid using abrasive materials like steel wool.
- Exterior Surfaces - Wipe the outside surfaces with hot water, sanitizer and a soft cloth or sponge on occasion throughout the day to maintain cleanliness. Then, polish the surfaces with stainless steel cleaner and a soft cloth at the end of the workday.
- Filter the Shortening - Filter the shortening in the fryer vat at the end of each day.
- Grease Filters - Clean the grease filters in the exhaust hood at the end of every business day. Allow the filters to dry out overnight.
- Filter Tube (B-IR-20x14 and B-IR-20 only) - Clean the filter tube assembly at the end of daily operations.
Weekly Maintenance Inspection & Cleaning
If the weekly preventative maintenance inspection reveals any damage, please contact an authorized technician to address the issue.
- Drain Valve and Shortening Return Levers - Check that the drain valve and shortening return levers are securely fastened for easy operation.
- High-Heat Pump and Drain Hoses (B-IR-20x14 and B-IR-20 only) - Inspect the high-heat pump, wash down and shortening disposal hoses (if applicable) for any wear. Place the wash down hose upright so the shortening can drain into a container.
- Temperature Sensing Probes - During the boil-out procedure, check the high-heat and temperature sensing probes for visual damage.
- Plumbing Heat Tape (B-IR-20x14 and B-IR-20 only) - Make sure that the insulation and electric heat tape wrapped around the plumbing behind the drain-through isn’t damaged.
- Boil-Out (B-IR-20x14 and B-IR-20 only) - Refer to our article on how to clean an Ultrafry fryer for instructions. Be sure to use the boil-out compound in accordance with the manufacturer’s guidelines.
