Winston CVap Legacy Holding Cabinet Gasket Replacement & Maintenance
A holding cabinet can help dough rise, keep prepared food warm until ready to serve or help bring pastries to temperature. However, everything that a holding cabinet does is based on its ability to maintain temperatures at a set point. This can only happen with gaskets that are sealing properly and not worn out, because broken gaskets won’t seal and temperatures can leak. Gasket Maintenance
- Step 1. Disconnect power - Before any maintenance or repairs, turn the unit off and unplug it from any power source.
- Step 2. Inspect gasket - Check the gaskets and inspect them for any tears or worn areas. If you notice the seal is broken or not sealing properly it will need to be replaced.
- Step 3. Wash gasket - Using a soft cloth and warm, soapy water, gently wipe each side of the gasket.
- Step 4. Rinse and dry gasket - Using a new, damp cloth rinse off the gasket. After rinsing, use a dry cloth to dry the gasket.
Gasket Replacement
- Step 1. Disconnect power - Before any maintenance or repairs, turn the unit off and unplug it from any power source.
- Step 2. Remove door - Lift up and out to remove the door.
- Step 3. Remove hardware - Use a screwdriver or drill to remove all screws and hardware along the sides of the door.
- Step 4. Pull apart door - After removing the screws, pull the door apart so it’s in two pieces.
- Step 5. Remove old gasket - Peel the old gasket off the door.
- Step 6. Secure new gasket - Install and secure the new gasket around the door.
- Step 7. Reconnect door - Put the two door pieces together and install the screws and hardware back into place to secure it.
- Step 8. Reinstall door - Reinstall the door back onto the unit by pushing it down into the hinges.
