Vulcan Steam Equipment Shutdown & Start-Up Instructions
From planned to unexpected, there are times when a commercial kitchen might need to close for an extended period. Fortunately, Vulcan steam oven and kettle equipment have guidelines to help you shut off and restart them properly, so they don't get damaged when idle or powered back up. Below are instructions from our friends at Vulcan for shutting down and starting up its steam equipment.

Vulcan Steam Equipment Shutdown Procedures
The following are shutdown instructions for multiple pieces of steam equipment. For all equipment, make sure that the unit is turned off, unplugged and disconnected from utilities (gas, water, electric and steam power).
Steamers
- Step 1. Following instructions in the operator's manual, delime the steam generator. Vulcan uses 854893-13 Scale Release. A counter steamer requires one bag, and a floor model requires two bags.
- Step 2. Once the generator is descaled, clean the entire unit using the NAFEM cleaning instructions in your operator's manual.
- Step 3. Keep the door slightly cracked open. This helps prevent mold and mildew buildup and dry rotting on the door gasket.
Steam Kettles
Below are instructions for multiple steam kettle models:
Fully Jacketed
- Step 1. Drain the water from the vessel. The drain plug is below and behind the draw-off valve.
- Step 2. Clean the entire kettle following the NAFEM cleaning instructions in your operator's manual.
2/3 Electric & Gas
- Step 1. Clean the entire kettle following the NAFEM cleaning instructions in your operator's manual.
- Step 2. Once you cleaned the unit, use Scotch Brite to clean any areas where there is noticeable corrosion.
- Step 3. Check the pressure gauge. If it isn't reading 25 to 30 IN/Hg of vacuum, reestablish the vacuum following the instructions either on the control panel overlay or in the operator's manual.
Direct-Steam & Braising Pan
Just follow the NAFEM cleaning instructions in your operator's manual.
Vulcan Combi Oven Start-Up Procedures
The following are restart instructions for multiple pieces of steam equipment. For all equipment, turn on the ventilation hood and see if it's working properly. Return power to all applicable utilities (gas, electric, water and steam power), and let them sit for about 15 minutes before turning on the power switch.
Steamers
- Step 1. Start by changing the cartridge in the water filtration system.
- Step 2. Follow the instructions in the operator's manual for deliming the steam generator.
- Step 3. Once the generator is delimed, clean the entire unit following the NAFEM cleaning instructions in your operator's manual.
- Step 4. If there is noticeable corrosion on the unit, use Scotch Brite to clean any areas where it's present.
Steam Kettles
Below are instructions for multiple steam kettle models:
Fully Jacketed
- Step 1. Drain the kettle vessel of any potential remnants of water. The drain plug is located below and behind the draw-off valve.
- Step 2. Refill the unit with distilled water.
- Step 3. Once the vessel is refilled, add 2 oz. of 00-833651 Rust Inhibitor.
- Step 4. Clean the entire unit following the NAFEM cleaning instructions in your operator's manual.
- Step 5. If there is corrosion on the unit, use Scotch Brite to clean any areas where it's notably present.
2/3 Electric & Gas
- Step 1. Following the NAFEM cleaning instructions in your operator's manual,
- Step 2. If there are signs of corrosion on the unit, use Scotch Brite to clean any areas where it's present.
- Step 3. Verify that the pressure gauge. is reading between 25 to 30 IN/Hg of vacuum. If it's not, reestablish the vacuum following the instructions either on the control panel overlay or in the operator's manual.
Direct-Steam & Braising Pan
- Step 1. Clean the entire unit following the NAFEM cleaning instructions in your operator's manual.
- Step 2. If there are signs of corrosion on the unit, use Scotch Brite to clean any areas where it's present.
