Coffee Trends 2025

Coffee is a major drink and business for the global population. From exports to imports, chain coffee shops to niche cafes, coffee remains the center of food service and staying awake. 2024 coffee trends saw the highs and the lows of pricing, cold brew and fair trade coffee, but now it’s time for 2025 to bring us into a new era of coffee. We don’t know what the new year will bring in, but we are predicting some familiar trends to keep rising in the coming year and some new developments to become big and booming.
Conscious Coffee Consumption
Trending through 2024, the plant based coffee and creamers are still going to be a large part of coffee trends 2025. Healthy coffee trends have been on the rise for years and some to include in 2025 might be:
- Mushroom coffee – This one has been on the rise since 2019, steadily growing as more people are interested in getting more than one benefit from coffee besides energy. With the variety in coffee drinks and the variety of mushrooms to consume, there are endless combinations of new mushroom coffee to be created. - Plant based creamer – Plant based creamers like oat milk, almond and soy have been around for a long time. What we might see trending more in 2025 is the lack of extra charges for non dairy creamers or milks. Some coffee shops previously have seen a decrease in sales this past year, and to combat that some stores have opted to not up-charge for alternative milks. This might start to be a larger trend for stores to entice consumers come 2025.
- Collagen coffee – Collagen coffee has been gaining traction as an easy add-in to make that morning cup of coffee a little more health beneficial. Collagen powder can be easily added to a cup of coffee, especially since many of these powders come in an unflavored version. More coffee shops have been picking up coffee add-ins like superfood powders, but now might see the rise in collagen coffee making its way to the menu board.
In-House Syrups

In-house syrups are not a new concept in the 2020’s, but we do see that these might become a bigger part of coffee shops in 2025. Syrups are a drink add-in that are all over coffee shop menus, but what is starting to make some shops stand out is homemade syrups adding a touch of craftsmanship to orders. Homemade syrup is a great way to market no-preservatives in your syrups, helping ease consumers who are more conscious about what ingredients they are drinking. Plus having in-house made syrup gives consumers that personalization they are looking for when spending on a treat.
Mobile/Online Pick Up
We saw the rise of mobile orders and online pick-ups in 2020, and these are here to stay. Many large brands of coffee shops have added walk-up windows to help with low-contact order pick-ups and these windows we might see more of in 2025. They are great for on-the-go customers and allow people to order on their phones during commutes. More customers might be opting for quick pick-ups at the walk-up window or ordering online so they can grab ‘n’ go to their next destination.
Behind the Scenes Trends
- Rising costs – It might be a good idea to brace businesses and customers for coffee prices in 2025. With Brazil being one of the top exporters of coffee globally, it comes as no shock that any natural disasters will have a ripple effect on the coffee industry. Between floods from heavy rain and droughts on the rise, this could mean coffee costs steadily increasing as a result.
- Less is more – With the rising cost of coffee, consumers might be taking a less is more approach when it comes to spending. Adding in multiple flavor syrups and getting labor-intensive coffees might come with some added charges. If the price of coffee keeps trending upward, we might see consumers going back to a more basic beverage like black coffee or a simple one flavor latte.
- Subscriptions – More coffee drinkers might be opting to make coffee at home, but that might just be a new business model. Coffee subscription boxes are on the rise and brands that offer delivery for pods or cups are going to continue to be a big factor in the business. Keep an eye on this booming business as customers might become home baristas with their coffee subscriptions.
