- Cross merchandising – Organize your aisles by combining things that naturally go together such as pasta sauce, noodles and bottles of wine. Having two high-margin items near a low-margin item will improve the chances that customers will add it to their cart.
- Proper positioning – Start each aisle with a welcoming display and lower priced items. This will give customers the idea that the pricing will be low down that aisle. Place the pricier items at the end of the aisle.
- Track the shrink – Shrink refers to the products that can’t be sold such as items that are past their expiration date, items that arrived damaged and stolen items. If not properly monitored, your shrink can get out of control. Keep in mind that a good rule of thumb for a grocery store is about a 3% shrinkage of total sales.
- Don’t overorder – If you have too many products in the back to replace what’s being sold off the shelves, then you’re losing money. It’s more efficient to go from truck to shelf. Make sure you have enough stock ordered plus a little extra, but don’t overdo it.
