Proof temperature range is from 80° to 105°F which makes it perfect for storing a wide variety of ready-to-serve preheated dishes. A total of 18 pan slides holds full and half size sheet pans by the bottom and full, half and third size steam table pans by the edge. The door has both magnets and a tight-fitting gasket to help maintain proper temperature. The HUBERT non-insulated universal heater proofer controls are located on the unit's bottom control drawer.
