This food warmer is designed to hold heated prepared foods at temperatures above the HACCP "danger zone" of 140°F (60°C). The sturdy stainless steel unit has a unique heating system design that delivers even distribution to prevent hot spots. The unit must be operated with water which is held in an enclosed area under the 2-half size food pans (included) . No additional pans are needed.
