What Type of Knife Is Best for Cheese
Cheese knives come in a variety of shapes, sizes and lengths designed with specific consistencies in mind. For soft cheese, the best knives will have a small thin blade anywhere from 5-15” and end in a pronged tip. On the other hand, cheese wires are best for cutting semi-hard to hard cheeses, while knives for the hardest varieties assert a straighter, less flexible blade with a double handle.
Why Do They Put Holes in Cheese Knives
Because cheese tends to have a high water content, it creates surface tension between the knife and the cheese, resulting in a suctioning effect. The holes you see in a cheese knife are intended to aerate the cheese to prevent the knife from getting stuck. For those who’ve ever tried to cut Brie, you’ll already be very familiar with this phenomenon. That’s why the less surface area on a cheese knife, the better.
