A forged carving knife is generally used for slicing meats, such as prime rib and steamship round roast. It is commonly used for buffets and catering purposes. With a generous 10" long blade, the carving knife can be manipulated to slice small, medium or large portions. It is often used with a channeled cutting board that catches drippings and juices to keep surfaces clean. The carving knife has a matching forged fork, sold separately, for ease of transporting slices onto a plate or serving platter.
