Nu-Vu Oven & Proofer Cleaning

Nu-Vu ovens and proofers are the perfect item in any commercial kitchen, especially ones baking bread and other goods. To ensure your baked items are the best they can be, it’s essential to clean your Nu-Vu unit regularly. Learn how to do so easily with the guide below.

This guide is applicable for all Nu-Vu oven and proofer models, including OP-2FM, SUB-123 and  NVT-3-9

How to Clean your Nu-Vu Oven & Proofer

  • Step 1—Clean your Nu-Vu oven daily and immediately after a spill has happened. 
  • Step 2—Use a stainless steel cleaner or hot soapy water and rinse on the stainless steel exterior to clean it.
  • Step 3—Remove the doors for easy cleaning. 
    • Step 3a—To remove the doors, open each one until it’s perpendicular to the face of the unit, then lift the door straight up.
    • Step 3b—Clean the glass with an OEM-approved glass cleaning solution.
    • Step 3c—Clean off any baked-on messes or debris with soap and hot water, then rinse with clean water. Remove tougher deposits by soaking in a stronger soap and water solution.
  • Step 4—Clean the interior and door jamb with mild soap and hot water, then rinse with clean water.

Cleaning the Proofer Element Cover

The Proofer Element Cover should be removed and cleaned on a regular basis while cleaning the interior of the unit. This is applicable for models like the SUB-123.

  • Step 1—Remove the Proofer Element Cover and clean it with mild soap and hot water. Rinse and then wipe dry.

Cleaning the Water Injection Nozzle 

Some oven and proofer models are equipped with a water injection nozzle. Depending on usage and your water hardness, your water injection nozzle may need to be cleaned regularly or semi-regularly. When it’s time to clean, here’s how you go about it:

SUB-123

  • Step 1—Remove the Proofer Element Cover to access the bottom of the proofer compartment. The nozzle will be located in front of the blower wheel.
  • Step 2—Remove the nozzle using a 7/16” wrench, then carefully unscrew the filter screen from the back of the nozzle. Shake out the small brass diffuser plug from the inside.
  • Step 3—Soak all the components for 30-60 minutes in a small container of a commercial mineral remover, like Lime-A-Way. Carefully brush and rinse all parts to remove all scale and mineral buildup.
  • Step 4—Reassemble the nozzle, being sure that the slotted end of the diffuser plug is to the outside. Install the filter and hand-tighten it to avoid damaging the nozzle.
  • Step 5—Install the nozzle in the proofer fitting with the 7/16” wrench, tightening carefully. Reinstall the Proofer Element Cover. 

NVT-3-9

  • Step 1—Turn off the proofer before cleaning.
  • Step 2—Remove the wire shelf racks to access the proofer fan cover assembly.
  • Step 3—Remove the fan cover assembly by lifting it up ¾” (19mm) making sure to align the fastener heads with the holes in the fan cover. Then pull the fan cover forward and move to the left, rotating the right side of the cover forward. 
  • Step 4—Remove the nozzle by rotating it ¼ turn counter-clockwise, then downward and away from the base. 
  • Step 5—Soak all the components for 30-60 minutes in a small container of a commercial mineral remover, like Lime-A-Way. Carefully brush and rinse all parts to remove all scale and mineral buildup.
  • Step 6—Reassemble the nozzle by aligning the flats on the base and nozzle, then push the nozzle in until it’s fully seated in the base. Turn it ¼ turn clockwise.
  • Step 7—Reinstall the fan cover assembly and wire shelf racks.
