Bar Cleaning Checklist

No one likes to sit down at a messy or sticky bar or see dirty glasses and shakers being used. Those are some of the many reasons why you should regularly clean your bar and its equipment. Keeping your bar or pub clean and sanitary helps ensure that good times can still be had while helping your patrons stay safe. Daily Cleaning Checklist Items

Before Opening

  • Clean any leftover mess or trash from the night before
  • Melt any remaining ice from previous night
  • Fill ice bin with fresh ice
  • Restock undercounter refrigerators
  • Clean beer taps and beer lines
  • Wipe down counters, seating, speed rails and service bar area
  • Place clean bar mats in appropriate spots
  • Fill napkin dispensers and restock cocktail straws
  • Make sure glasses are clean and restocked
  • Prepare sanitary buckets and cleaning cloths
  • Clean and prep garnish trays
  • Check and clean (if needed) all bartending tools like shakers, spoons, jiggers and strainers
  • Put away any cleaned glassware and dishes

During Shift

  • Wipe down bar after each customer has left
  • Check and empty trash cans as needed
  • Wash glasses and bar tools as needed
  • Refill ice bin as needed
  • Restock undercounter refrigerators
  • Straighten chairs or stools
  • Replenish disposables like napkins and cocktail straws

Closing

  • Wipe down and sanitize counters and speed rails
  • Wash glasses and bar tools
  • Clean sinks and glass washers
  • Clean soda guns and liquor bottles in speed rails
  • Wash bar mats, trays and grates
  • Clean chairs or stools
  • Empty and sanitize ice bins
  • Wrap up any remaining fruit garnishes and store in refrigerator
  • Rinse drains and wash drain covers
  • Take out trash and place new liners in cans
  • Sweep and mop floors
  • Wipe down beer taps
  • Cap any open bottles
