Electrolux Professional Equipment Shutdown & Start-Up Instructions
Whether it's temporary setups or unforeseen circumstances, commercial kitchen equipment requires specific measures to make sure units don't get damaged. Electrolux Professional has direct procedures you must follow on each of its equipment Below are shutdown and start-up instructions from our friends at Electrolux Professional gas burners and ranges, Speedelight presses, Skyline ovens and more.

Shutdown & Start-Up Instructions for Electrolux Professional Gas Open Burners & Oven Ranges
Shutting Down
- Step 1. Clean everything from the burners and trivets to the exterior and interior surfaces. Use a damp cloth.
- Step 2. Clean the thermocouple tips thoroughly. For best results, us a brush with no metal bristles.
- Step 3. Check the gas nozzles. Make sure to remove any clogs or blockages.
- Step 4. Clean the oven chamber with a damp cloth, warm water and mild detergent. Dry it carefully with a separate cloth.
- Step 5. Leave the oven door open, so air can circulate inside it properly. If there is a risk of dusts, insects or other pests from entering the cavity, you may leave the door shut.
- Step 6. Clean the gas valves carefully.
- Step 7. Isolate and shutdown the gas supply to the unit.
Starting Up
- Step 1. Open the gas valves.
- Step 2. Check each burner to see if the flames have proper minimum and maximum consistency.
- Step 3. Check for any pests, insects or other vermin inside or near the unit. Act accordingly if they're present.

Shutting Down
- Step 1. Clean the unit by removing any grease or dirty residues and descaling if necessary. Check out our Speedelight cleaning guide for instructions.
- Step 2. Rinse and dry the unit before applying a petroleum jelly on the vessel surface. Once it's applied, close the lid.
- Step 3. Remove the drain tap from the unit. Clean the tap and apply food lubricant.
- Step 4. Turn off gas, electric and water supplies off.
Starting Up
- Step 1. Restore all gas, electric and water supplies.
- Step 2. Clean the vessel surface and remove the petroleum jelly. If the vessel wasn't properly prepared during shutdown, conduct a very thorough cleaning of the unit.
- Step 3. Check the drain tap. Reapply food lubricant if it's sticky.
- Step 4. Fill the vessel with water. Make sure it comes to a fierce boil before draining it.
- Step 5. See if there is any water leaking from underneath the unit. If there is leaking, contact an authorized service technician to remedy and repair.
Shutdown & Start-Up Instructions for Electrolux Professional Skyline or Other Combi/Convection Ovens
Shutting Down
- Step 1. Start an automatic cavity cleaning cycle. Then, clean the door gasket and air intake filter on the front panel.
- Step 2. Remove any debris from the fan area, isolating the electrical power supply before you remove the fan guard.
- Step 3. When using a liquid cleaner, make sure to also run a final light cleaning with detergent and rinse hoses connected to the water. This cleans the rinse hoses and pumps.
- Step 4. Leave the oven door open slightly. If there is a risk of dusts, insects or other pests from entering the cavity, you may leave the door shut.
- Step 5. Descale the boiler, if applicable. You might want to contact an authorized service technician to conduct the descale.
- Step 6. Close either the water or gas supplies, whichever is applicable.
Starting Up
- Step 1. Restore the gas or water supply, whichever is applicable.
- Step 2. If the unit wasn't properly shut down or the door was sealed shut, conduct a complete cleaning of the cavity. You might want to contact an authorized service technician to conduct a full cleaning.
- Step 3. Clean the door gasket and air intake filter on the front panel.
- Step 4. Make sure the boiler automatically empties out.
- Step 5. Check if the door seal is tight during steam mode. Then clean the seal by washing soapy water, rinsing and drying.
- Step 6. See if the gasket and seal are in good condition and that the light portholes are tight. Also, check the tightness of the core probe and if the air intake valve on the front panel and drain siphon are working properly.
- Step 7. Check for any pests, insects or other vermin inside or near the unit. Act accordingly if they're present.
- Step 8. Contact an authorized service technician to conduct the following:
- Check the water solenoid valve's tightness.
- Check the condition of detergent and rinse aid pumps and test the pumps.
- Remove and clean/descale the water level probes.
- Check if the electrical terminals, including the power contactor are tight.
- Check if the convection fan isn't seized.
- Remove the burners, clean the interior and check the ignition and ionization electrodes. The electrodes will need to replaced if damaged.
