Globe Fryer Operating Instructions
Before you can go sizzling up the best french fries around, you need to know how to operate a fryer safely. Knowing the right steps on starting up the fryer can make a huge difference between running smoothly and getting hurt. Below we will walk you through Globe fryer operating instructions, so you know how to fill, light and operate the fryer.
Operating Instructions
Filling Fryer Tank
- Step 1. Close drain valve - Before filling the fry tank, close the drain valve.
- Step 2. Fill fry tank with compound - Fill the fry tank about ¾ in. below the full line. Heat the fry compound to 375°F for 6 to 10 minutes, then check the level. If it isn’t at the full line, add more fry compound so it meets the level.
- Step 3. Remove basket support rack - Remove the basket support rack when filling the fry tank with solid compound. Be careful not to bend, break, or twist the thin capillary wires of the sensing elements located in the fry tank when filling with solid compound.
- Step 4. Pack solid shortening - Pack solid shortening below the tubes, spaces between the tubes and at least 1 in. above the top of the tubes. Make sure there aren’t any air spaces left around the heat tube surfaces.
- Step 5. Install the basket support rack - Install the basket support rack over the fry tank heat tubes.
- Step 6. Allow compound to liquify - Set the temperature to 200°F and allow the compound to liquify. Add more to adjust compound level.
Pilot Lighting
- Step 1. Turn thermostat off - Turn the thermostat to OFF.
- Step 2. Turn valve to PILOT - Turn down the safety control valve and turn it counterclockwise to the PILOT position.
- Step 3. Purge air from line - Hold down the safety control valve for 1 minute to purge air from the gas supply line.
- Step 4. Ignite pilot light - While pressing the safety control valve, use a lighter or match to ignite the pilot. Hold down the safety control valve for 30 seconds. If the pilot light doesn’t stay lit, repeat this step while holding down the safety control valve longer.
- Step 5. Turn valve to ON - Turn the safety control valve counterclockwise to the ON position. Make sure not to press down on the safety control valve.
- Step 6. Fill fry tank - Fill the fry tank with either oil or solid shortening. Don’t turn the thermostat to ON until the fry tank is filled with oil or solid shortening.
- Step 7. Set desired temperature - Set the thermostat to the desired temperature. Wait for the frying compound/oil to reach the desired temperature before normal operation.
Normal Operation
- Step 1. Place product in basket - Place the food product in the fry basket, no more than ½ full. Don’t overfill the basket or fill the basket while it is in/near the fryer.
- Step 2. Drop basket in fryer - Once the compound/oil is at the desired temperature, gently drop the basket into the fryer.
- Step 3. Lift frying basket - After the product cooking time is finished, lift the fry basket out and place it on the nesting hooks for draining. Allow at least 5-10 seconds for it to drain.
