When the time comes to fully shutdown your commercial kitchen equipment, it needs to be done properly to ensure that it'll remain operational when the time comes. For Henny Penny fryers, the case is the same. In the event that your Henny Penny fryer needs to be shutdown, make sure you follow their specific procedures are followed.

Shutdown Procedures for Henny Penny Evolution Elite and LOV Fryers

  • Step 1. Perform a Clean-Out on all vats (formally known as a Boil-Out).
    • NOTE: Be sure to purge the filter lines during this procedure.
  • Step 2. Make sure that each fry vat is clean and dry. Do not leave any oil in the vats.
  • Step 3. If available, place vat covers on all vats.
  • Step 4. Thoroughly clean and dry the filter pan, crumb catcher, filter screen and filter ring. Reassemble the filter pan with a clean, dry filter.
  • Step 5. Remove and clean the JIB tube.
    • For single well units, empty and clean the oil reservoir.
  • Step 6. Unplug the unit.
    • For gas equipment, shut off the gas supply and disconnect the gas line.

Shutdown Procedures for Henny Penny Open Fryers

  • Step 1. Perform a Clean-Out on all vats (formally known as a Boil-Out).
  • Step 2. Make sure that each fry vat is clean and dry. Do not leave any oil in the vats.
  • Step 3. If available, place vat covers on all vats.
  • Step 4. If applicable, empty and clean the oil reservoir.
  • Step 5. Thoroughly clean and dry the filter pan, crumb catcher, filter screen and filter ring. Reassemble the filter pan with a clean, dry filter.
  • Step 6. Unplug the unit.
    • NOTE: For gas equipment, shut off the gas supply and disconnect the gas line.

Shutdown Procedures for Henny Penny Pressure Fryers

  • Step 1. Perform a Clean-Out on all vats (formally known as a Boil-Out).
  • Step 2. Clean the underside of the lid and the surface of the gasket.
  • Step 3. Make sure that each fry vat is clean and dry. Do not leave any oil in the vats.
  • Step 4. Lower the lid to a closed and latched position.
    • NOTE: Don’t engage the lid arm on the 4-head, 8-head and Velocity fryers.
  • Step 5. Thoroughly clean and dry the filter pan, crumb catcher, filter screen and filter ring. Reassemble the filter pan with a clean, dry filter.
  • Step 6. Unplug the unit.
    • NOTE: For gas equipment, shut off the gas supply and disconnect the gas line.
