Imperial Griddle Cleaning

Your Imperial griddle is a reliable workhorse in your commercial kitchen. Whether you run a breakfast joint, a diner or a fast food eatery, your griddle more than likely sees a lot of action. To help ensure your griddle produces delicious dishes for your customers, it needs to be regularly cleaned and prepped. Learn how to clean your Imperial griddle properly to keep it sanitary and safe.

This cleaning guide is applicable for ISAE and ISCE Series of griddles.

Supplies

Daily Cleaning Steps

  • Step 1—Using a nylon griddle scraper, remove any stuck-on spills while the surface is still hot. 
    • Note: Wear heat-resistant gloves and refrain from slamming the scraper into the back wall to avoid creating holes. 
  • Step 2—Wipe off any loose debris with a piece of burlap when the griddle is off.
  • Step 3—Wash the griddle surface with hot, soapy water.
    • Note: Make sure not to flood the griddle surface with water at any point during cleaning.  
  • Step 4—Rinse with a mixture of water and vinegar.
  • Step 5—Rinse the griddle surface once again with clean, hot water. 
  • Step 6—While the griddle is hot, re-oil the surface with liquid frying compound or shortening.

Periodic Cleaning

The following procedures do not have to be done on a regular basis, but should be completed on a monthly or yearly basis.

  • Check the ventilation system—Checking the ventilation system on a semi-regular basis will help prevent any build-up from negatively affecting your unit.
  • Annual unit check-ups—Have your Imperial griddle inspected by an authorized service technician to make sure that it’s still in good shape.
