Pitco Fryer Shutdown & Start-Up Instructions

No matter the circumstances, you might be required to shutdown equipment for an extended period of time. Pitco fryers have specific guidelines to help keep equipment clean and in working order once you return to regular operation.
Below are instructions from our friends at Pitco on how to properly shut down and start up Pitco fryers.
Pitco Fryer Shutdown Procedures
- Step 1. Filter the fryer.
- Step 2. Drain oil into a suitable container. Follow the manufacturer recommendation for storage of oil or dispose it properly.
- Step 3. Perform a boilout or cold-soak on the fry tanks.
- Step 4. Drain and thoroughly dry the interior of the fry tanks.
- Step 5. Spread a thin layer of clean cooking oil over the interior fry tank surfaces.
- Step 6. Install tank covers.
- Step 7. Clean and thoroughly dry the filter pan and pickup assemble. Reassemble them.
- Step 8a. Gas fryers: Close the manual gas supply valve at the gas supply connection on the wall.
- Step 8b. Electric fryers: Unplug the fryer from the electrical source.
Pitco Fryer Start-Up Procedures
- Step 1a. Gas fryers: Open the manual gas supply valve at the gas supply connection on the wall.
- Step 1b. Electric fryers: Plug in the fryer from the electrical source.
- Step 2. Remove the tank covers.
- Step 3. Perform a boilout or cold-soak on the fry tanks.
- Step 4. Inspect all filter drawers, portable filters, crumb catches and accessories. Then, clean them thoroughly.
- Step 5. Reassemble the filter pan elements, including new filter paper, and set in place.
- Step 6. Fill the fryer to about 1-inch below the “Oil Level” line with cold oil.
- Step 7. Turn fryers on for use.
