Prince Castle Holding Unit Programming & Calibration
So you’ve unwrapped your Prince Castle holding unit, but now what? Maybe you want to know how to customize the product names, add them to menus and adjust the cooking temperatures. But before you do any of that, make sure you calibrate the heaters so you don’t accidentally nuke your fried chicken into a chewy, rubberized version of its former glory. Or, on the other side, give bacteria and other foodborne pathogens the edge they need to stage a chicken coup.
But that begs the question: how do you do that? We’ll take you through the programming and calibration procedures for Prince Castle’s extended holding bins (EHB) and dedicated holding bins (DHB).
How to Calibrate the Heaters
For reference, the upper heaters are pre-set to 225℉ while the lower heaters are pre-set to 195℉. However, the programmable range of the upper heater is 150℉-275℉ and the lower heater is 150℉-225℉.
- Step 1. Press the Actual Temp button – Navigate with the up and down arrows on the display screen until you reach the desired shelf. Select either the upper or lower heater.
- Note: Wait until heaters have reached their set temperatures before attempting calibration.
- Step 2. Take the heater’s temperature – Using a thermometer, take the temperature at the center of the shelf near the heater’s surface. But be careful! The surface is extremely hot.
- Step 3. Press the Prince Castle Logo and Actual Temp button – Press and hold both buttons for approximately 5 seconds or until you see the indicator light turn on and the actual heater temperature displayed on screen. Press the Setpoint button to clear the inaccurate temperature readings.
- Step 4. Reset the temperature – Change the temperature by pressing the up or down arrows until the numbers match the readings on your thermometer. If you accidentally enter the wrong value, no worries. Just press the Setpoint button and all changes will be erased.
- Note: A Hold message will appear on the screen for only 3x4 units. When this happens, release all buttons and wait for the message to disappear.
- Step 5. Save the adjusted temperature – Press the Prince Castle Logo button to save and exit calibration mode.
How to Program the Menus
- Step 1. Press the Prince Castle Logo – Press and hold the logo until the display reads Prog and all the Pan buttons light up red.
- Step 2. Press the Menu/Enter button – Without releasing the Menu/Enter button, toggle through menu options with the Up and Down arrow. Once you see the desired menu, you can go ahead and release the Menu/Enter button.
- Step 3. Press the Pan button – The Pan lights will now change from red to yellow and the display will change from Prog to the entered product choice. Toggle through the product options with the Up and Down arrows. To save, press the Menu/Enter button.
- Step 4. Finish programming menus 1-6– You can program the rest of the menus by repeating steps 2 & 3. Make sure to press the Menu/Enter button each time to save your changes. When you’re done, press the Prince Castle logo to exit programming mode.
- Note: You can set a pan as “not used” by leaving the entry field blank.
How to Change the Product Names
- Step 1. Press the Prince Castle logo and the Menu/Enter button – Hold both buttons together until you see the programming menu. Using the Up or Down arrow, scroll to the Prod Name and Enter menu.
- Step 2. Select the desired product – Using the Up or Down arrow, find the desired product and press the Menu/Enter button to select. The first letter will start blinking.
- Step 3. Change the product name – Press the Up or Down arrow until you’ve reached the desired number, letter or symbol. Then, press the Pan button to change the next letter until the product name is complete. Don’t forget to press the Menu/Enter button to save your changes!
- Step 4. Finish changing all product names – You can change the rest of the product names by repeating steps 2-3. Don’t forget to press the Menu/Enter button after completing each product name to save your changes. Lastly, press the Prince Castle logo to exit the programming mode.
How to Change the Hold & Cook-More Times
- Step 1. Press the Prince Castle logo and the Menu/Enter button – Hold both buttons together until you see the programming menus. Using the Up and Down arrows, scroll to the Prod Time and Enter menus.
- Note: For units with 6 or 8 pans, scroll to Set Product Time and Enter.
- Step 2. Press the Menu/Enter button – Once in the Set Product Time menu, use the Up and Down arrows until you find the desired product. To select the product, press the Menu/Enter button.
- Step 3. Set the desired hold time – Use the Up and Down arrows to navigate to the desired hold time. Save the new setting by pressing the Menu/Enter button.
- Step 4. Set the desired Cook-More time – Use the Up and Down arrows to navigate to the desired Cook-More time. Save by pressing the Menu/Enter button.
- Step 5. Finish programming Hold & Cook-More times – You can finish programming the Hold and Cook-More times for the rest of the products by repeating steps 2-4. Once finished, press the Menu/Enter button to save. Then, press the Prince Castle logo to exit out of the programming mode.
- Note: Make sure you press the Menu/Enter button to save your changes. Otherwise, the program will keep its original Hold and Cook-More times.
