Globe Fryer Preventative Maintenance

Put fryers at the top of your to-do list to ensure that they can serve delicious fried food. Globe fryer preventative maintenance is essential to ensure that they are clean and able to operate safely. Below we will help you with daily, weekly and monthly cleaning, so your units can be maintained easily. 


The following guide is designed for Globe fryer models GFF35G, GFF50G, GFF80G, GFF35PG, GFF50PG and GFF80PG.

Globe Fryer Preventative Maintenance

Before cleaning the unit, always turn it off and allow both the fryer and oil to cool down before continuing. Also be sure that the main gas valve is switched to the OFF position while cleaning.

Daily Cleaning

Daily cleaning should be done on the following:

  • Body - Wipe clean with a soft cloth and non-abrasive cleaner
  • Backsplash - Use a damp cloth and mildly soapy water to wipe clean
  • Controls - Wipe down with a clean cloth

Weekly Cleaning

  • Step 1.Turn thermostat knob and safety control valve off - Turn both the thermostat knob and the safety control valve to the OFF position.
  • Step 2. Remove baskets and racks - Remove the fryer baskets and the support racks. Clean these separately from the fryer. 
  • Step 3. Strain fryer - Strain the fryer oil/compound into a clean container. Check that there is no oil left in the fry tank. To prevent damage, shut off the pilot if the tank is going to be empty for more than 2 minutes.
  • Step 4. Add cold water - Add cold water to the MAX line.
  • Step 5. Add cleaning solution - Add a cleaning solution according to the cleaner directions. 
  • Step 6. Bring to boil - Light the pilot and turn the thermostat to 250°F. Let the unit bring the solution to a light boil long enough to loosen or dissolve all varnish or carbon deposits, about 5 minutes.
  • Step 7. Let solution cool - Turn the unit off, making sure the pilot is off. Let both the fryer and solution cool completely. 
  • Step 8. Rinse unit - After cooling, rinse the unit with clean water. Rinse again with 2 cups of vinegar. Rinse a final time with clean water until the vinegar smell is gone. 
  • Step 9. Drain unit - Thoroughly drain all water and solution from the fry tank.
  • Step 10. Dry unit - Make sure to thoroughly dry the unit.

Monthly Cleaning

Monthly cleaning should include cleaning the burners and orifices, plus checking for any debris build-up.
