True Bakery Case Cleaning

There would be no bakery without the iconic display case. How else would prospective customers get a glimpse of that delectable assortment of fresh bread or lacey cakes iced with a practiced hand. Same as how a bakery case can entice people into eating with their eyes, it can just as easily avert them. Remember, everything’s on display in your True curved glass refrigerated bakery case, including every crumb, speck of dirt and sticky food residue. That’s why True bakery case cleaning should be at the top of every closing to-do list.
What You’ll Need

- Baking soda
- Warm water
- Soft cloth/sponge
- Stainless steel cleaner

Cabinet Cleaning
- Step 1. Unplug the cabinet – Because you are using water to clean your True display cabinet, it’s vital that you cut power to the machine to protect yourself and the equipment from any electrical-related incidents.
- Step 2. Empty the display case – Next on the list is moving all food items from the display case to another refrigerated unit. If your bakery goods don’t require refrigeration, then simply move them to another clean, covered storage area.
- Step 3. Clean the interior – Since display cabinets house food, they’ll need to be cleaned with warm water and mild dish soap at least once daily. Fortunately, the process only takes a few minutes. Just wipe down all surfaces with your cleaning solution, taking care to remove all food residue, and then dry with a fresh towel.
- Note: If you notice the cabinet's interior produces an odor, you can use a solution of diluted baking soda and water instead of mild dish soap.
- Step 4. Clean the exterior – For the exterior, you can follow the same procedure as with the interior, excluding the stainless steel surfaces. For those, wipe down with a cleaner designed for stainless steel, scrubbing with the grain.
- Caution: Do not use steel wool, abrasive or chlorine-based products on stainless steel surfaces, as these will damage the metal and cause it to corrode.
- Step 4. Restock the display case – Once clean, the food items may now be returned to their rightful place as a beacon to the hungry.
- Step 5. Restore power – If your display unit is of the refrigerated variety, don’t forget to turn it back on! It would be a small tragedy to throw out all those goodies because they spoiled overnight.
Evaporator Coil Cleaning
For those of you who have a good understanding of the laws of thermodynamics, you’ll already know that refrigeration is not a science of cooling but a process of removing heat. That’s where the evaporator coil comes in, without which cool food and beverages would not be possible. However, the evaporator coil can’t do its job if it’s coated in dust, lint or grease. To keep your energy bills low and your display case operating at peak performance, you should schedule cleaning once every 6 months.
Things You’ll Need
- ¼” nut driver
- Power drill with ¼” nut setter bit (optional)
- Vacuum
- Warm water
- Mild soap solution
- Cloth/towel

- Once every 6 months
Cleaning Instructions
- Step 1. Unplug the cabinet – before cleaning or performing maintenance on any piece of machinery, you should always cut power to the unit to protect yourself and your equipment from electrical hazards.
- Step 2. Empty display case – Next on the list is moving all food items from the display case to another refrigerated unit.
- Step 3. Lift front glass & air deflectors – Lift up on the front glass panel and air deflectors to remove.
- Step 4. Remove rear doors – With the door open, place a hand on either side, lift up, and pull out towards yourself. The door should just pop out.
- Step 5. Remove shelving – Take out the shelving, horizontal light bar, rear horizontal bracket and support shells.
- Note: Make sure you unplug the light cord before removing.
- Step 6. Remove the inner floor – The inner floor is held in place by gravity, making for painlessly easy removal. Just lift up and pull out.
- Note: For model TDMR-77, you’ll have to detach the center product floor filler bracket before you’ll be able to remove the inner floor.
- Step 7. Unscrew the air grate – With your screwdriver, unfasten the screws securing the inner front return air grate and set it aside.
- Step 8. Unscrew the front fan housing cover – Again, unfasten the screws with your screwdriver, only this time locate the ones securing the front fan housing cover. Once completed, you can pull out the cover until it rests in the forward position.
- Step 9. Unscrew the rear evaporator coil cover – Once you’ve freed the cover from its bindings, you can then go ahead and remove the evaporator coil.
- Note: Do not remove the bracket that’s mounted on top of the evaporator coil.
- Step 10. Clean the evaporator coil – Vacuum the evaporator coil, making sure to remove all dirt and debris that has accumulated on its surface. Then, take a wet cloth and a mild dish soap solution to clean the surrounding areas.
- Step 11. Reassemble the unit – Follow these steps in reverse order to put your True refrigerated display case back together.
- Step 12. Restock the display case – Once clean, the food items may now be returned.
- Step 13. Restore power – Don’t forget to plug your display case back in when all is said and done! After all, you’ll want to put your newly clean evaporator coil to good use.
