Many restaurants and dining establishments rely on Blodgett in their commercial kitchens. From convection to combi/steamer ovens, their equipment is designed to cook a wide variety of foods quickly and easily. In order to keep your unit operating to maximum efficiency, you should following a routine cleaning and maintenance schedule. Below are simple Blodgett oven cleaning instructions you should follow daily, weekly and annual maintenance. 

*For Blodgett BLCT and BCT Mini Combi Ovens, please follow these cleaning procedures.

Daily Cleaning Instructions

Cleaning your Blodgett oven daily not only helps extend the life of the unit but also keeps the quality of your food’s at its absolute best. Once you’re done cooking in the kitchen, allow the oven to cool down below 140°F before cleaning the interior and exterior.

Zephaire and DFG Convection Ovens 

Interior Cleaning 

  • Step 1. Remove the pieces – Take out the racks, rack supports and blower wheel cover on the oven’s back panel. Remove the cover by unfastening the screws in each corner before lifting up and out.
  • Step 2. Soak the pieces in cleaner – Immerse each component in a cleaning solution of ammonia and water.
  • Step 3. Apply cleaning solution to interior – Spray a commercial oven cleaner on the interior surface and walls, and let it sit for about 10-20 minutes. If you use a cleaner with caustic or abrasive compounds, make sure they don’t come in contact with the heating element, blower when or temperature probe.
  • Step 4. Wipe down the cleaning solution – Once the cleaning solution has had a chance to penetrate grease and debris, wipe down the interior with a wet cloth.
  • Step 5. Dry and Reinstall pieces – Take out the components soaking in the ammonia, and dry them off with a towel or cloth. Once they’re dry, reinstall them in your oven.

Exterior Cleaning

  • Step 1. Thoroughly soak cloth with cleaner – Make sure the cloth you’re using on the outside of your oven is completely saturated with stainless steel cleaner. If you want to remove heat tint or discoloration from grease and grime, use non-caustic oven cleaner only.
  • Step 2. Wipe down the oven – Using your soaked cloth, wipe down the stainless steel exterior. Be sure to scrub extra hard on areas with thick grease buildups.
  • Step 3. Dry off the oven – When you’re done applying cleaner, use a clean cloth or towel to dry off the exterior.

BC, BCX and BX Combi Oven/Steamers

Interior Cleaning

  • Step 1. Cool down the oven – Open the oven door, and place the unit into cool down mode. This should help the temperature dip below 140°
  • Step 2. Prepare your spray bottle – These models use a special spray bottle and should be cleaned using a mild commercial oven detergent/degreaser. Check your owner’s manual for recommended cleaners and proper filling and operating instructions.
  • Step 3. Spray cleaner into the interior – Before spraying, pump the bottle 20 times to increase pressure and create a fine spray stream. Spray the interior with the cleaner. If you would like to widen your spray patter, make sure to adjust the nozzle during operation.
  • Step 4. Put the unit on steam mode – After spraying the cleaner, close the door. Then, place your oven into steam mode for about 10 minutes.
  • Step 5. Rinse the interior – Once steam mode is complete, open the unit and rinse out the interior with water from the attached spray hose.

Exterior Cleaning

  • Step 1. Thoroughly soak cloth with cleaner – Make sure the cloth you’re using on the outside of your oven is completely saturated with stainless steel cleaner. If you want to remove heat tint or discoloration from grease and grime, use non-caustic oven cleaner only.
  • Step 2. Wipe down the oven – Using your soaked cloth, wipe down the stainless steel exterior. Be sure to scrub extra hard on areas with thick grease buildups.

Weekly and Annual Cleaning Instructions

Aside from daily cleaning, there are preventative measures you should take throughout the year to keep your unit in top shape. Some require weekly attention while others only need focus during the month or a couple of times a year.

Weekly Cleaning for All Models

No matter which model you have, check the air intake behind the oven once a week. Make sure to clean out any lint, grease or other obstructions that could limit air flow in your unit. This can be done using a vacuum, damp cloth or a soft brush depending on what is blocking the intake. Doing this not only helps during the cooking process, but it also helps extends the life of the parts and components in your oven.

On BX-14 Boilerless models, you’ll need to clean behind the fan guard on a weekly basis. Below are specific steps to follow.

Blodgett BX-14 Boilerless Oven Weekly Cleaning 

  • Step 1. Cool the oven down – Make sure that you’re done using your oven for the day before starting this procedure. Open the door, and place the unit on cool down mode. Make sure your oven is below 140°F before turning off the unit.
  • Step 2. Remove racks and fan guard – Remove your oven’s racks and the rack guides on the left side of the unit. Then, rotate both screws on the left side of the left side of the fan guard. Swing the guard toward the front of the unit.
  • Step 3. Prepare your spray bottle – These models use a special spray bottle and should be cleaned using a mild commercial oven detergent/degreaser. Check your owner’s manual for recommended cleaners and proper filling and operating instructions.
  • Step 4. Apply cleaner and place on steam mode – Spray cleaner thoroughly to the fan, heat source and back of the fan guard. Once cleaner has been applied, close the oven door. Put the oven on steam mode for about 10 minutes.
  • Step 5. Rinse the cleaner – After 10 minutes in steam mode, swing the fan guard toward the front of the unit. Rinse off the cleaner by using plenty of water.
  • Step 6. Reinstall components – Put the fan guard back into its regular closed position, and rotate both screws to secure the guard. Then, reinstall the racks and rack guides.
  • Step 7. Let oven vent overnight – Leave the oven door open overnight so the oven can vent. If you plan on not using your unit for an extended period of time, place it into hot air mode so the interior cavity can dry out.

Annual Maintenance for All Models

Unlike other ovens, these Blodgett ovens don’t require an annual lubrication. On DFG and Zephaire models, check the venting system at least once a year for any deterioration. Moisture and corrosive flue products used throughout the year can weaken the system over time. If you notice damage, have it repaired by an authorized technician.
