If you need to shutdown your commercial kitchen equipment for a prolonged period of time, it’s important that it’s done properly. Both the Blodgett combi ovens and convection ovens have specific shutdown procedure to ensure the equipment is clean, safe and ready for operation once restarted. Should you need to shutdown your Blodgett oven, then follow the procedures detailed below for both their combi ovens and convection ovens.

Blodgett Combi Oven Shutdown Procedure

  • Step 1. Power off the oven by pressing the power button on the control or rotate the Mode Switch to the off position.
    • NOTE: BCX, BX, CNVX, HV and HVH models will have a circuit breaker at the bottom of the control and this should be turned off after powering down.
  • Step 2. Shut off the water by turning the water counter clockwise until it stops.
    • NOTE: If you have a lever, make sure it is perpendicular to the pipe.
  • Step 3. Turn off the gas if your combi oven is a gas unit. At the wall, turn the gas off by making sure the lever is perpendicular to the pipe.
  • Step 4. Disconnect power to the oven.
    • Step 4a. For Gas Oven simply unplug the 115v cord from the wall.
    • Step 4b. For Electric units power the unit off at the main circuit breaker.
  • Step 5. Leave the door open. This helps any moisture dry out and helps preserve the gasket.
    • Step 5a. If you have a Two Stage Door Handle open the oven to the First Stage.
    • Step 5b. If you have a BC-20, HV or HVH crack the doors open and leave them.

Blodgett Convection Oven Shutdown Procedure

  • Step 1. Clean Oven Using Normal Practice.
  • Step 2. Power the Oven Off.
    • Step 2a. This can be done by turning the Mode Switch to the off position.
    • NOTE: Electric ovens may have a circuit breaker at the bottom of the control panel, and this should be turned off after powering down.
  • Step 3. Gas Ovens—Turn the Gas Off.
    • Step 3a. At the wall turn the gas supply off. Make sure the gas valve lever is perpendicular to the pipe.
  • Step 4. Disconnect Power to the Oven.
    • Step 4a. For Gas Oven unplug the 115v cord from the wall outlet.
    • Step 4b. For Electric ovens power it off at the main circuit breaker.
  • Step 5. Leave the Door(s) partially open to cool.
