The Carpigiani K3 milkshake and sundae machine is built to meet the demands of fast-paced, high-volume establishments. To help make sure your machine stays in good working order, this Carpigiani K3 cleaning guide outlines weekly, biweekly and monthly maintenance procedures in an easy-to-understand way.

These instructions are for K3 series models, such as the K3B and K3E.

Supplies

Daily Cleaning 

Before you start up the machine everyday and close it out at the end of everyday, you’ll need to sanitize the door and its surrounding components to keep it clean and the product tasting fresh. Here’s how you do it:

Closing Cleaning Procedures 

  • Step 1. Prep the sanitizing solution – For this, you’ll need to fill an empty cleaning bucket with hot water and 1 packet of McD sanitizer packet for every 2-1⁄2 gallons of water. Next, use the brush to mix the powder until it dissolves in the water.
  • Step 2. Clean the dispensing spout area and spinner plate – Using the door spout brush, clean the dispensing spout, spinner plate, nozzle, handle and piston area several times with the sanitizing solution.
  • Step 3. Sanitize the spigot area and spout – Next, spray the spigot area and spigot area, handle, spout and the nozzle’s interior with the sanitizing solution.
    • Note: Do not spray sanitizer onto the photocell, as this could damage the machine.
  • Step 4. Clean the drip tray, drawer & hopper cover – Sanitize and rinse the drip tray, drawer and hopper cover in the sink. Thoroughly dry them before reinstalling.
  • Step 5. Clean the exterior – Wipe down the freezer door, front panel and other exterior components that may be prone to moisture buildup or food splash.
  • Step 6. Detach and clean the syrup pick up tubes  – The pick up tubes are currently sitting in the syrup jugs or are attached to the syrup bags. Remove or disconnect these now and set the syrup jugs/bags aside for later. Then, wipe down the lines with a fresh, sanitized cloth.
  • Step 7. Sanitize the syrup lines  – Place the pick up tubes in the bucket containing the sanitizing solution. Press the “STOP” button followed by the “COLORED CUP” button twice. Let the pump run for 1 minute before pressing the “STOP” button again.  
  • Step 8. Repeat step 6 for all syrup lines – Repeat the sanitization process for each of the syrup lines. 
  • Step 9. Put the milkshake machine in PROD mode – Once you’ve finished sanitizing all the syrup lines, place all the tubes into the bucket and press the “PROD” button.

Opening Cleaning Procedures 

  • Step 1. Repeat steps 1-5 from Closing Cleaning Procedures – Repeat steps 1-5 from above. Make sure you prep the sanitizing solution correctly and clean the dispensing spout, spinner plate, spigot and exterior.
  • Step 2. Take the pick up tubes out of the sanitizing solution – Remove all the syrup lines from the cleaning bucket and place them on a fresh cloth in the cabinet.
  • Step 3. Empty the syrup tubes – Next, press the “STOP” button followed by the “COLORED CUP” button twice. Press the “STOP” button once all remaining sanitization solution has been purged from the lines.
  • Step 4. Repeat the steps 2-3 for all syrup lines – Empty all the syrup lines of the sanitizing solution as outlined in steps 2-3. 

Cleaning the Keyboard

It’s a good idea to relieve  the keyboard of all its greasy fingerprints and smudges at the end of each shift. Since it’s a touchscreen, you’ll want to lock it before accidentally change its settings when   To do this, follow these Carpigiani milkshake machine cleaning instructions:

  • Step 1. Press and hold the “CLENOUT” button – Press and hold the “CLENOUT” button for a total of three seconds or until the LED light flashes. 
  • Step 2. Wipe down the keyboard – Using a damp, clean cloth, wipe off any dirt, food debris or fingerprints off the keyboard panel.
  • Step 3. Unlock the keyboard – Don’t forget to unlock the keyboard again when you’re finished! Just press and hold the “CLENOUT” button again for 3 seconds until the LED flashes. 

Weekly Maintenance Instructions

To prevent your machine from breaking down or the product tasting sour, follow these Carpigiani milkshake machine cleaning instructions for the topping bins, hopper and pump once every week. Make sure your hands are cleaned and sanitized before completing the following procedure.

Sanitizing the Topping Containers & Pumps

Washing the Bins

  • Step 1. Remove the topping containers - Take off the pumps and bins used for toppings.
  • Step 2. Empty the containers - Discard any unused toppings.
  • Step 3. Wash the bins - Clean out the containers with McD All Purpose Super Concentrate and hot water (122-140°F or 50-60°C) to remove any remaining residues.
  • Step 4. Sanitize the containers - Soak the bins in a solution of 1 packet McD Sanitizer and 2-1/2 gallons of warm water (70-90°F or 21-32°C) for 1 minute.
  • Step 5. Dry the bins - After sanitizing the bins, remove them from the solution and let them air dry thoroughly.
  • Step 6. Return the containers to the unit - Once the bins are dry, reinstall them in the unit.

Cleaning the Topping Hopper & Pumps

  • Step 1. Empty the hopper - Drain the hopper by placing an empty container inside the syrup cabinet, opening the tap and then draining the water. Once the hopper is drained, discard the water and close the tap.
  • Step 2. Disassemble the hot topping pumps - Take apart the hot topping pumps; if needed, refer to the owner’s manual for more detailed instructions.
  • Step 3. Wash the components - Clean the pump parts with McD All Purpose Super Concentrate and hot water (122-140°F or 50-60°C).
  • Step 4. Scrub the parts - Brush the discharge tube assembly and valve body to remove any residues. To reduce the chance of losing the small parts, wash them in a pan. Once the parts are clean, rinse them with clean water.
  • Step 5. Sanitize the pump parts - Disinfect the components by placing them in a solution of 1 packet McD Sanitizer and 2-1/2 gallons of warm water (70-90°F or 21-32°C) for 1 minute.
  • Step 6. Dry the components - Take the parts out of the solution and air dry them completely.
  • Step 7. Reinstall the parts - After drying thoroughly, reinstall the pump parts by reversing the disassembly process. If you need step-by-step instructions, see the user’s manual.

Biweekly Cleaning Procedures

Every 14 days, you’ll want to clean and sanitize all parts and components that come in direct contact with the product. The Milkshake machine has a countdown timer and will remind you when it comes time for its bimonthly deep clean. The freezer maintenance instructions should be performed on both the milkshake and sundae sides of the unit.

Cleaning the Syrup System

  • Step 1. Remove the syrup pick up tubes and bags - Take out the syrup pick up lines and syrup jugs/bags.
  • Step 2. Wipe the syrup pick up tubes - Remove the syrup pick up tubes from the jugs and then wipe the exterior with a clean, sanitized cloth.
  • Step 3. Prepare for possible leaks - Catch any possible leaks by removing the cup holder and placing an empty container under the door spout.
  • Step 4. Mix a cleaning solution - Make a cleaning solution by combining McD All Purpose Super Concentrate and hot water (122-140°F or 50-60°C) in a large bucket.
  • Step 5. Clean the syrup lines - Wash the syrup pickup lines by placing them in the cleaning solution, pressing the colored cup button to run the pump at maximum speed and then letting the water flow for 1 minute. Press the STOP button when finished.
  • Step 6. Rinse the lines - Next, place the lines in a large bucket of clean water, run the pump at maximum speed and let the water flow for 1 minute. Push the STOP button once the lines are rinsed.

Maintaining the Freezers

Draining the Unit

  • Step 1. Drain the freezer - Place a bucket under the dispensing spout, open the spout, press the Agitation button and let product empty out of the machine. When the product becomes liquid, push the STOP button.
  • Step 2. Disassemble the main freezer components - Uninstall the pressure tube, mix pump and mix agitator. Refer to the Carpigiani K3 series manual for step-by-step instructions.
  • Step 3. Rinse the machine - Pour 2-1/2 gallons of cool water into the mix hopper and use the supplied brushes to clean the mix hopper, mix level sensor, agitator shaft, mix inlet hole and the drive hub of the mix pump.
  • Step 4. Drain the rinse water from the hopper and cylinder for 10 seconds - Put a bucket under the spout, open the spigot piston and press the Agitation button. Let the water drain out for 10 seconds, then press the STOP button: the piston will close automatically.
  • Step 5. Continue draining the hopper and cylinder - Repeat Step 4 until the water draining out of the unit is clear.

Cleaning the Freezer

  • Step 1. Fill the tank with cleaning solution - Pour 2-1/2 gallons of warm water and McD All Purpose Super Concentrate into the freezer.
  • Step 2. Agitate the cleaning solution - Loosen any residues by pressing the Agitation button, letting the beater run for 10 seconds and then pressing the STOP button.
  • Step 3. Scrub the unit - Use the supplied brushes to clean the mix hopper, mix level sensor, agitator shaft, mix inlet hole and the drive hub of the mix pump.
  • Step 4. Drain out the solution - Empty out the cleaning solution and any loose residues by opening the spit and letting the unit drain. Push the STOP button once all the liquid has drained out of the machine.
  • Step 5. Rinse the unit - Pour clear water into the unit, open the spit, let the water flow out of the unit and then press the STOP button.

Sanitizing the Freezer

  • Step 1. Fill the freezer with sanitizing solution - Mix 1 packet of McD Sanitizer and 1 gallon of warm water (70-90°F or 21-32°C) and then pour the solution into the hopper.
  • Step 2. Agitate the solution - Turn on the beater, let it run for 10 seconds and then press STOP.
  • Step 3. Scrub the internal components - Brush the mix hopper, mix level sensor, agitator shaft, mix inlet hole and the drive hub of the mix pump.
  • Step 4. Let the freezer soak for 1 minute - Then, let the solution soak the unit interior for 1 minute.
  • Step 5. Drain the sanitizer - Discharge the sanitizer by opening the spigot and then pressing the STOP button when finished.

Cleaning Other Freezer Parts

  • Step 1. Take apart the mix pump, dispensing door and beater - Disassemble the mix pump, dispensing door and beater per the instructions outlined in the owner’s manual.
  • Step 2. Make a cleaning solution - Fill a large sink with McD All Purpose Super Concentrate and hot water (122-140°F or 50-60°C).
  • Step 3. Wash the parts - Clean the disassembled mix pump, dispensing door and beater with the cleaning solution and the supplied brushes, making sure to remove all lubricant and mix residue.
  • Step 4. Rinse the parts - Once the components are clean, rinse them with clean, hot water.
  • Step 5. Prepare the sanitizing solution - In another sink, combine 1 packet of McD Sanitizer and 2-1/2 gallons of warm water (70-90°F or 21-32°C).
  • Step 6. Soak the parts - Place the disassembled parts in the sanitizing solution and let them sit for 1 minute.
  • Step 7. Dry the parts - Then, remove the components from the solution and allow them to air dry completely.
  • Step 8. Reinstall the components - Return the mix pump, dispensing door and beater, along with the pressure tube, mix pump and mix agitator, to the machine.
  • Step 9. Apply a small amount of sanitizer - Brush the mix inlet hole, pump drive hub and syrup injectors with sanitizer. Remember to spray the back of the cylinder, too.

Finalizing the Sanitation Process

  • Step 1. Sanitize the hopper - Fill the mix hopper with 1 packet of McD Sanitizer and 2-1/2 gallons of warm water (70-90°F or 21-32°C), allowing the water to drain into the cylinder.
  • Step 2. Clean the mix hopper and other parts - Brush the mix level probes, mix hopper surfaces, mix pump and exterior surface of the hopper agitator.
  • Step 3. Sanitize the pump and freezing cylinder - Allow the sanitizing solution to flow into the pump and freezing cylinder by turning on the beater for 10 seconds and then pressing STOP. Allow the solution to sit for 5 at least minutes.
  • Step 4. Disinfect the dispensing spout - While the sanitizing solution is sitting in the pump and cylinder, brush sanitizing solution onto the dispensing spout.
  • Step 5. Wipe the unit exterior - In addition to brushing solution onto the dispensing spout, use the downtime to clean the outside surfaces with a sanitized towel.
  • Step 6. Drain the sanitizer - After letting the sanitizer sit in the unit for 5 minutes, place an empty bucket under the draw spout and drain the sanitizing solution.
  • Step 7. Sanitize the syrup lines - Fill a bucket with 1 packet of McD Sanitizer and 2-1/2 gallons of hot water (122-140°F or 50-60°C). Place the syrup lines in the solution and run the syrup pump at maximum speed so the solution can flow for 1 minute. Press STOP when finished.
  • Step 8. Drain the syrup lines - Take the syrup lines out of the sanitizer and then run the syrup pump to empty out any leftover sanitizing solution. Once completed, push STOP.
  • Step 9. Reinstall the syrup lines - Return the syrup lines to the unit.

Monthly Air Filter Maintenance

Once a month, you’ll have to clean the air filter on your Carpigiani milkshake machine. Handle the mesh filter with care and keep it away from sharp objects so as not to damage it.

  • Step 1. Take out the air filter - Find and remove the air filter. If you’re not sure where it’s located or how to uninstall it, see the user’s manual for more specific instructions.
  • Step 2. Wash the air filter - Prepare a cleaning solution of McD All Purpose Super Concentrate and warm water, then wash the filter in the solution.
  • Step 3. Rinse the filter - Rinse the water through the filter side that normally faces outward. In other words, in the opposite direction of the airflow.
  • Step 4. Dry the filter - Shake off excess water, then wipe up any remaining moisture on the filter with a clean, sanitized towel.
  • Step 5. Reinstall the air filter - Once the filter is clean and dry, return it to the unit.
