From condiments to hot fudge, Server pumps are the perfect device to allow your staff or your customers to easily dispense the perfect amount of product. Just like any other piece of equipment in your commercial kitchen or restaurant, it needs regular cleaning. This not only ensures that the pump continues to work properly, but it also ensures the safety of the food product.

Below are some simple instructions on how to clean your Server pump on a regular basis. This guide covers both the CP and FS series for Server.

What You’ll Need:

  • Mild dishwashing liquid
  • OEM-recommended sanitizer/cleaner
  • Cleaning cloths
  • Tap water
  • Containers or pans
  • Server pump cleaning brushes
  • Optional: nylon cleaning brush

Do not use scrapers, steel pads, steel wool, abrasive or caustic cleaners, ammonia-based cleaners, or cleansing agents that have high concentrations of alkaline, acid or chlorine. These could damage your Server pump and possibly void your warranty.

Clean-in-Place Procedure

This basic cleaning process is a safe, easy way to flush out your Server pump. It’s comprised of four major steps: clean, rinse, sanitize and rinse. This is a procedure you should do prior to pump disassembly and the full cleaning procedure.

Cleaning

  • Step 1. Dispense any remaining food product from inside the pump.
  • Step 2. Wash and rinse off the outside of the pump.
  • Step 3. Thoroughly rinse and flush the outside and inside surfaces of the pump with hot water. To do so, you can place the lower end of the pump in a container of hot water, flushing out any and all remaining food product by using the pump to filter the water through.
  • Step 4. Mix 1 TSP (5 ML) of a mild dishwashing liquid with 1 quart of hot tap water.
  • Step 5. Place the lower end of the pump into the mixture, operating the pump until all of the mixture has cycle through the pump.

Rinse

  • Step 6. Now place the lower end of the pump into 2 cups of hot tap water, operating the pump until all of the mixture has cycle through the pump.

Sanitize

  • Step 7. Mix 1 ounce of an OEM-recommended sanitizer/cleaner with 2.5 gallons of room-temperature tap water.
  • Step 8. Place the lower end of the pump into the sanitizing mixture, operating the pump until all of the mixture has cycle through the pump.

Rinse

  • Step 9. Finally, place the lower end of the pump into 1 cup hot tap water, operating the pump until all of the mixture has cycle through the pump.

Full Pump Cleaning Procedure

Before its first use, and on a regular/daily basis, you will have to disassemble the pump fully to clean each part. This cleaning procedure is important for the safety and the longevity of the pump. If you don’t clean your Server pump regularly, you may run the risk of voiding your warranty.

  • Step 1. Disassemble the pump. Refer to your manual on how to do so.
  • Step 2. Wash all the parts clean with a mild dishwashing liquid and hot water. Keep small parts in a pan or another container to ensure you don’t lose any of them. Use the supplied brushes to clean in tight places.
  • Step 3. Rinse all components thoroughly with clean water.
  • Step 4. Fully dry all parts with a clean cloth.
  • Step 5. Sanitize all components by following recommended local sanitization requirements. Allow all air components to air dry after this step. Additionally, all components are dishwasher safe.
