Nu-Vu Oven Troubleshooting - Oven

From sandwich shops and casual dining to bakeries and cafeterias, Nu-Vu ovens and proofers are some of the best in the industry because they’re quick and easy to operate. In the rare instance an issue pops up, don’t let it halt business. Below are Nu-Vu oven troubleshooting tips, so you can diagnose and solve a problem in no time.

This guide covers troubleshooting for Nu-Vu OP-2FM and SUB-123 models.

Unit Won’t Light Up or Heat

If the oven and/or proofer’s power switch is turned on but the unit isn’t lighting, heating or rotating the motor, check for the following:

  • Tripped power switch – Reset by turning the power switch to OFF. Wait about 10-15 seconds before turning it back to the ON position.
  • Tripped breaker or blown fuse – Check the facility’s fuse box for a tripped power supply breaker or blown fuse.
  • Faulty or disconnected electrical components – The electrical connections on the oven might be disconnected or broken. These will need to be checked by an authorized technician.

Proofer Won’t Heat

If the proofer is lighting up, producing humidity and rotating the motor but not heating, see if these problems are the cause:

  • Temperature control is past room temperature – The proofer’s temperature control is set past room temperature. Adjust it following the procedure in the operator’s manual.
  • Temperature control setting is incorrect – Check for temperature disparity by placing a thermometer on the center of a shelf and set the oven’s temperature to 100 degrees Fahrenheit. If there is more than a 5-degree difference between the thermometer reading and when the unit reaches temperature, adjust the temperature control setting following the instructions in the operator’s manual.
  • Faulty temperature coil – If the temperature coil doesn’t reach “red-hot” status, it needs to be replaced by an authorized technician.
  • Electrical issues – Contact an authorized technician to check for proper voltage, phase and amperage and correct any issues.

Oven Warms Up or Recovers Slowly

If the oven is operating but takes a long time to warm up or recover, the issues below could be the culprit:

  • Temperature control setting is incorrect – Check for temperature disparity by placing a thermometer on a pan in the center of the oven and set the oven’s temperature to 350 degrees Fahrenheit. If there is more than a 10-degree difference between the thermometer reading and when the unit reaches temperature, adjust the temperature control setting following the instructions in the operator’s manual.
  • Faulty heating element – If the heating element doesn’t reach “red-hot” status, it needs to be replaced by an authorized technician.
  • Electrical issues – Contact an authorized technician to check for proper voltage, phase and amperage and correct any issues.

Uneven Baking

If product isn’t baking evenly, look for the possible issues below:

  • Damaged door gasket – Check the oven door gasket to see if it’s sealing shut. Any cracks, tears or other wear might prevent from the door from closing and properly operating. Follow the gasket replacement procedures in the operator’s manual, or contact an authorized technician to replace it.
  • Faulty heating element – If the heating element doesn’t reach “red-hot” status, it needs to be replaced by an authorized technician.
  • Improperly installed side walls and element cover – The oven’s side walls and element cover might have been installed incorrectly. Have an authorized technician check welding and screws as well as make necessary adjustments.

Timer Won’t Run

If the oven’s timer isn’t running, check for the following problems:

  • Timer knob is stuck – If the timer knob is getting stuck, turn it back and forth several times. This should help free it up.
  • Faulty knob – If you try loosening the knob following the procedure in the bullet point above, have it replaced by an authorized technician.
  • Faulty electrical connections and wiring – There might be poor electrical connection or bad wiring in the unit that are hindering the timer. Both will need to be checked and remedied by an authorized technician.

Proofer Has No Humidity

If the proofer is on, lighting up and heating but not producing humidity, see if the issues below are present:

  • Water pan needs more water – Make sure the water pan has at least 2 inches of warm water.
  • Water pan is out of position – The water pan should be fully seated on the humidity element.
  • Faulty heating element – If the heating element doesn’t reach “red-hot” status, it needs to be replaced by an authorized technician.
  • Electrical issues – Contact an authorized technician to check for proper voltage, phase and amperage and correct any issues.

Motor Stops or Won’t Start

If the oven door is closed but the oven motor cuts out or doesn’t start, looking for the following:

  • Door microswitch needs adjustment – While the oven is operating, open the door and press down on the microswitch. If the motor starts, this means the microswitch is out of alignment. Follow adjustment procedures in the operator’s manual.
  • Faulty microswitch wiring – If you try the test in the first bullet point but the motor stops running after a short period of time, there could be issues with the wiring that connects the power switch, microswitch and motor. This will need to be repaired by an authorized technician.
  • Faulty microswitch – If you try the test in the first bullet point but the motor and temperature control don’t start, the microswitch needs to be replaced by an authorized technician.
  • Faulty motor – If you try the test in the first bullet point and the temperature control works but the motor doesn’t start, the motor is broken. Have it replaced by an authorized technician.

Motor Keeps Running with the Door Open

If the oven door is open but oven motor is still running, check the potential issues below:

  • Door microswitch needs adjustment – See if the micro switch plunger at the top door hinge is too bound. If it is, adjust the micro door switch to allow the plunger to move in and out. Follow the adjustment procedures in the operator’s manual.
  • Faulty microswitch – If the microswitch plunger at the top door hinge is moving freely, this means the microswitch is broken. Contact an authorized technician to replace the part.

Blower Wheel is Noisy

If the oven blower wheel is making unusual sounds, the following problems could be causing them:

  • Rubbing up on the element cover or ceiling – This causes a grinding or scraping sound. An authorized technician will need to check and adjust the blower wheel up or down.
  • Loose screws – You’ll hear a light rattling noise from the unit. An authorized technician will need to check the blower wheel and tighten or replace Allen screws causing the sound.
  • Out of balance – The blower wheel might be out of balance, causing a very loud ratting sound and noticeable vibration. An authorized technician will need to adjust the blower wheel accordingly.
