Globe Gas Charbroiler Operating Instructions
Globe’s selection of gas countertop charbroilers make grilling simple and convenient. Since they have a smaller footprint, these units can be easily incorporated into any style of commercial kitchen. Not only that, but they’re easy to use, making them great for your whole kitchen staff to utilize. Learn how to use your Globe gas charbroiler with the guide below.
These instructions are applicable for stainless steel and cast iron radiant models, and char rock models like the GCB15G, GCB24G, GCB36G and GCB48G.
How to Light the Pilot Light
Prior to lighting the pilot, make sure that the charbroiler is level. Additionally, check that the catch tray has been properly placed.
- Step 1—Check that all the knobs are in the “OFF” position.
- Step 2—Turn the main gas valve off for five (5) minutes prior to lighting the pilots in order to clear any existing gas.
- Step 3—After the five minutes are up, turn the main gas valve on.
- Step 4—Using a match or lighter, hold it at the pilot and wait for a flame to be established. Once a flame is present, you can remove the ignition source. Repeat this step for each burner.
- NOTE—The pilots can be reached through the holes on the front or through the top grate. Make sure to remove the radiant or char rocks before you attempt to light the pilot.
- Step 5—Turn each knob to the “ON” position. If the burners won't light right away, turn the knobs to the “OFF” position. Then, from the front panel, turn the pilot valve screw counterclockwise with a screwdriver. This will increase the flame height. When you’re done, repeat Step 4.
- NOTE—If the flame is too large, turn it down and reset the burner ignition. Use a screwdriver to turn the valve to adjust the flame as needed.
How to Ignite the Burner
Turn the knob to the “ON” position to ignite the burner. Adjust the size of the flame accordingly. Do not leave the knob in the “ON” position for more than 15-20 minutes. Be sure that there is proper airflow into the unit, especially the space in between the unit’s legs as it emits combustion air.
How to Operate the Charbroiler
Before use, thoroughly clean the charbroiler with a mild detergent. Be sure to not use any abrasive cleaners.
Turn on the burners and preheat the unit for 15-20 minutes. Set the flame height or temperature to desired setting. Once the unit is preheated, you may follow the operating instructions for your particular unit. In this guide, we will cover both radiant and rock charbroiler operating instructions.
Radiant Charbroiler
- Step 1—Place each angled radiant in their proper positions into the slots on the front and rear supports. Make sure they’re centered over the straight sections of the burner.
- Step 2—Place the cover over the burner, checking that they’re sitting in the slots on the rear support.
Rock Charbroiler
- Step 1—Place the racks that hold the rocks into position over the burners.
- Step 2—Place the appropriate amount of char rocks onto the rack and align them evenly. Avoid stacking or piling the char rocks as this can cause damage and uneven heating.
- NOTE—Each rock charbroiler unit requires different amounts of rocks. Follow the instructions listed below accordingly:
- GCB15G-RK: 30 pcs
- GCB24G-RK: 60 pcs
- GCB36G-RK: 90 pcs
- GCB48G-RK: 120 pcs

Cooking Grates
Place the top cooking grates so they’re aligned with the grid bars, and angle them toward the front of the unit. Alternatively, you can place the grid bars flat—not angled—for cooking.
